Here I am. Preparing for a client call starting shortly. Sat at my little desk, surrounded by inspiring books (mainly on the ‘still to read’ list), pen and paper and tech combined. Bottle of water and cup of tea for hydration.

Every single client is unique and every session is different but each call will have a common thread... What’s going well, what are the challenges and what’s the focus. I hope my clients will leave each session feeling more positive, clearer on what they want and with some tools to help them achieve that.

Hosting leftovers. Worried about over catering when friends come round? Just think of the ‘free’, no hassle lunches for the next few days. I love to make multiple sides if we’re having a BBQ as it means there’s always something for everyone but usually leftover too.

Along with the chicken here I have a better and carrot slaw, spicy sweet potato and butternut squash mix and a green bean tomato salad. Colour, texture, protein, fibre, slow releasing carbohydrates, healthy fats.

Studies suggest that individuals who tend to be optimistic, or see the glass as half full, may experience a greater release of hormones like dopamine and endorphins, which contribute to positive mood and well-being. They also tend to handle stress more effectively, potentially reducing the release of stress hormones like cortisol.

Batch cooked quinoa. I made I big bowl of mixed quinoa the other day, added edamame beans and some broccoli, seasoned and drizzled with lemon juice and olive oil. Full of slow releasing carbohydrates, protein and fibre.

Added to a plate of cottage cheese, beetroot kimchi and salad leaves, I had a balanced lunch in no time.

When the sun is peeping out and you crave Mediterranean freshness. Beautiful buffalo mozzarella and perfectly ripe tomatoes on fresh sourdough, seasoned and drizzled with extra virgin olive oil served with just picked basil leaves. And some lightly cooked asparagus on the side.
Who says good food needs to be hard to make. This couldn’t have been quicker to prepare and was absolutely delicious.

Happy Easter. Today we are on island time, where the motto is ‘Rush Slowly’. Can you take a bit of time to slow down today, to take even just a few minutes for yourself? Lunch in the sun. Rye bread topped with cottage cheese, mixed seeds and olive oil, cucumber, pickled red onion and a hard boiled egg. Oh, and washing it down with a kombucha. I’m getting all my macros and polyphenols here from a variety of quality sources. And vitamin d from the lovely sunshine.
