Tender roasted carrots, caramelised to perfection, served atop creamy whipped ricotta, drizzled with hot honey, and finished with crunchy pistachios and fresh herbs. It's a comforting blend of sweet and savoury that’s as indulgent as it is nutritious.

🌱 MFP Tip: Cutting back on dairy doesn’t mean sacrificing taste! For a plant-based version, swap the ricotta for a dairy-free alternative like cashew cream or soy-based ricotta. Looking for a way to flip the script on bread and make it a health boost instead of a carb bomb?

Let me introduce you to Lentil Flatbread—packed with protein, gluten-free, and a sneaky hero for your Meat Footprint Journey (MFP). With this recipe, you can ditch the wheat while packing in flavour, texture, and serious health benefits.

Ingredients

1 cup yellow or orange lentil flour (blend dried ones into a fine powder if you can’t find it).

½ cup water (adjust for consistency).

2 tbsp olive oil.

½ tsp baking powder.

½ tsp salt.

Optional: A pinch of cumin, paprika, or herbs like thyme for extra flavour.

Method

1. Grease a heavy pain and warm to a medium heat.

2. In a bowl, mix lentil flour, baking powder, salt, and any spices/herbs you like. ( I use a pinch of cumin and chilli powder)

3. Slowly add water and olive oil, stirring until you get a pancake-batter-like consistency.

4. Pour batter directly into a hot, lightly greased skillet, spreading into a flat circle.

5. Cook for about 3 minutes per side on the stove, flip a few times until firm and golden.

This recipe yields 4 small flatbreads or 2 larger ones, perfect for wraps, dips, or eating as-is.

I slapped in some of that pea HUMMUS from yesterday, owwww the protein overload 😚😙😂
