- Sweet potato (roasted cubes) – 1 cup
- Spinach or mixed greens – 1 cup
- Red onion (sliced) – ΒΌ cup
- Olive oil – 1 tbsp
- Paprika – Β½ tsp
- Black pepper & salt – to taste
- Lemon juice – 1 tbsp

- Season chicken and bake until cooked.
