🤩Recipe of the Week! 🤩

😋Asparagus & roast pepper muffins😋

These make great anytime snacks – or the perfect addition to your working lunch or garden picnic. Let us know if you try them? I think they are lovely.

🤩Ingredients 🤩
* Low calorie cooking spray
* 200g asparagus tips, cut into small pieces
* 100g roasted red pepper, finely chopped
* 6 eggs
* 2 garlic cloves, crushed
* Small handful of finely chopped fresh tarragon
* Salt and freshly ground black pepper

🤩Method🤩
1. Preheat the oven to 180°C/160°C Fan/Gas 4

2. Line a regular muffin tray with 2 paper cases per hole, and spray them with low calorie cooking spray.

3. Blanch the asparagus in a saucepan of lightly salted boiling water for 1-2 minutes. Drain, pat dry with kitchen paper and divide the asparagus and roasted red pepper between the muffin cases.

4. Beat the eggs and stir in the garlic and tarragon. Season well and carefully spoon the egg mixture into the muffin cases. Bake for 20-25 minutes or until set and golden then leave to stand for 10 minutes.

5. Enjoy straight away or cool and keep in the fridge for up to 3 days and eat cold or thoroughly reheated.

Two brilliant days at Slimming World head office.
Honestly this is the most rewarding job anyone could ask for and the cherry on the cake is the support we received as self employed consultants from head office is just incredible.
Next time I have training I’ve signed up for virtual training which I’m now gutted about as I won’t get the delicious food from our amazing staff canteen but I get to sleep in my own bed which is always a win.
This is another thing I love about slimming world, not everyone is able to attend HO but we can all still get the very best training from the comfort of our own home.

Carrot and coriander soup for lunch today three portions one for me one for my mam and a third for during the week or the freezer

Blueberry pancakes with raspberries, blackberries and blueberry’s with vanilla yogurt

Wayne Wilson will take on the London Marathon after losing 16kg

After losing an amazing 2st 7.5lbs (15.8kg), Wayne has transformed his life – and now he’s on a mission to help others do the same through his role as a Slimming World Consultant 💫.

That’s not all… What started as a personal goal to get more active became something much bigger – and now Wayne is taking on the incredible challenge of running the London Marathon as part of our 2026 team 🙌.

He’s running in aid of Cancer Research UK in memory of his mum – making every step even more meaningful 💜.
