Lunch under 500 calories. Baked potato with beans and mushrooms and topped with low fat shredded mozzarella and red cheddar. Salad with mixed salad leaves, spinach, sweet pepper, pickled gherkins and beetroot slices. Use the beetroot juice and pickle juice as a tangy dressing. Few croutons and drizzle truffle glaze. Bulk every meal up with big plate salad or green vegetables.

Prawn toast. Instead of frying bread, bake it or grill it both sides. Liquidise some cooked prawns to make a paste and spread on low calorie bread. I used Brennan's be good. I ran out of sesame seeds but would look nicer if more on top. Tastes delicious 😋.

Great cheat is cauliflower rice. I put a steam pack in a frying pan with half pack wholemeal rice and heat. I add smoked paprika, garlic salt, onions, and my secret ingredient, a sprinkle of ground cloves. Toss in some chopped scallion at the end. Tastes just like normal rice to me and so filling. I make my curries with the famous mayflower mix which in my opinion is just about the best tasting curry sauce that is also low in calories. You can of course raise the heat by adding extra hot spices but is a good base to start with. I add pre cooked chicken which I can cook up myself using a skinless piece of chicken or as I usually see packets of cooked chicken with yellow stickers in local shops, I used those. Also a good way to use up any left over roast chicken. Very economical meal as well as a great fakeaway. I added peas and spinach to the curry for that extra healthy fix and to include vegetables. Finished with a sprinkle of sesame seeds. Tastes great, low calorie and filling. A portion of this with rice and curry would be around between 150 and 200 calories depending on the portion. I would have four meals out of this as very filling and great for pre made lunch the next day.

My Saturday night fakeaway. 500 calories. Half calories of a takeaway version. This is an Angus quarter pounder in a sour dough bap. Burger was air fried with a garlic butter and chopped onion using a low fat spread and fresh garlic and onion. Burger bun stuffed with crunchy lettuce and tomato with low fat cream cheese. Burger sauce made with low fat mayo, ketchup, mustard, chopped gherkin and a splash of the gherkin pickle juice. To give it a wee kick, added a dash of peri peri sauce. Delicious 😋

Prep for next week's lunches. Large cottage pie made for four separate lunches for the week. Lean mince, onions, carrots and gravy topped with sliced boiled potatoes and baked to give a crunchy topping. Approx 400 calories per quarter portion. Could sprinkle low fat cheese on top to finish when reheating on lunch days. A full meal in one.

Easy homemade low fat, high protein ice-cream made with 2 parts zero fat great yogurt, 1/2 parts honey. Add vanilla essence to taste I'd desired. Add fruit or chocolate chips as required. Again 1/2 parts. For mine I used two cups greek yogurt to half cup honey and half cup dried berries. I also cut up a Jaffa cake biscuit into small pieces and added to the mix. When stirred in and mixed. I grated a little dark chocolate on top. Put in an air tight container in the freezer and in a couple of hours you have a creamy, healthy ice-cream perfect for the hot weather. Enjoy this healthy treat.

Crustless pizza quiche. In baking tin add veggies. I used onions, peppers, spinach and baby tomatoes. I whisked up five eggs with a tablespoon of zero fat greek yogurt a d a tablespoon of Philadelphia light cream cheese. To this I added garlic powder, onion powder, paprika, chilli powder, a splash or two of tabasco and salt and pepper. I also added chopped pieces of mozzarella. After adding cooked veggies to baking tin, I covered then with the egg mix. I let this cook at 180 for ten minutes or until quiche solid. Removed from oven and covered in a mix of tomato paste, mayo, and ketchup. Spread this and then topped with more low fat cheddar shredded and slices of mozzarella to make a cheesy pizza topping. I added some pesto on top but this is optional. Popped back in oven just to melt cheese and voila, a high protein, low fat and crustless quiche pizza. Cut I to four and have for lunch, dinner or a snack. Delicious 😋

Delicious cauliflower cheese. Sauce made with left over vegetable soup that had been made with a packet mix. To the left over thick soup I added zero fat greek yogurt and Philadelphia light cream cheese to up the protein and ended up with a tasty, creamy white sauce. I decided to use it to make some cauliflower cheese. To the sauce, I added some fresh spinach, mixed herbs and low fat grated cheddar cheese. This makes a delicious, healthy, low carb, high protein white sauce which I discovered by accident but I really couldn't tell the difference. It's alot lower in carbs as no flour required and lower in calories. Boiled cauliflower and when cooked, added a couple tablespoons of the boiled water to the sauce. Drained cauliflower and poured the sauce over the cooked cauliflower in an oven proof dish. Finished it off by topping with more low fat shredded cheddar and shredded mozzarella. To spice it up I sprinkled on some paprika and chilli powder. Baked at 160 in air fryer for fifteen minutes or until cheese melted and browned on top. Cauliflower cheese lovely on its own or as a side dish. The sauce can also be used as a pasta sauce or white sauce for lasagne or a stand alone sauce for fish or chicken.
