Crustless pizza quiche. In baking tin add veggies. I used onions, peppers, spinach and baby tomatoes. I whisked up five eggs with a tablespoon of zero fat greek yogurt a d a tablespoon of Philadelphia light cream cheese. To this I added garlic powder, onion powder, paprika, chilli powder, a splash or two of tabasco and salt and pepper. I also added chopped pieces of mozzarella. After adding cooked veggies to baking tin, I covered then with the egg mix. I let this cook at 180 for ten minutes or until quiche solid. Removed from oven and covered in a mix of tomato paste, mayo, and ketchup. Spread this and then topped with more low fat cheddar shredded and slices of mozzarella to make a cheesy pizza topping. I added some pesto on top but this is optional. Popped back in oven just to melt cheese and voila, a high protein, low fat and crustless quiche pizza. Cut I to four and have for lunch, dinner or a snack. Delicious 😋
