Are you panicking about the lack of salad in the shops (or is it just me 😂)? If, like me, your lunchtime go to’s are salad, then it’s time to look at alternatives that actually may end up being slightly more healthy! Try using veg that is more readily available at the moment such as courgettes, aubergines, tender stem broccoli etc. Roasting, grilling or lightly steaming and then tossing with your favourite dressing may increase the range of nutrients and fibre you are consuming plus it’s a bit more exciting than tomatoes, lettuce and cucumber, don’t you think? Top it with some protein such as cannellini beans or grilled chicken - I’ve used tinned sardines but they didn’t look particularly aesthetically pleasing so I left it off for the photo 😜 If you would like advice on how to tweak your diet to improve your health, please contact me to discuss how I can help you.
