Crispy Parmesan Asparagus Fries Recipe πŸ˜‹

Spring is in full swing, and what better way to celebrate than with these delicious and crispy Parmesan Asparagus Fries, which you can make in the Air Fryer!

Ingredients:
Fresh asparagus spears
Parmesan cheese
Breadcrumbs (gluten-free if required)
Garlic powder
Paprika
Eggs
Salt and pepper

Instructions:
Wash the asparagus spears and trim off the tough ends. Pat them dry with a paper towel.

In a shallow dish, combine the grated Parmesan cheese, breadcrumbs, garlic powder, paprika, salt, and pepper.

Dip each asparagus spear into the beaten eggs, allowing the excess to drip off.
Roll the asparagus in the Parmesan breadcrumb mixture, ensuring they are evenly coated.

Preheat your air fryer to 400Β°F (200Β°C) for a few minutes.

Place the coated asparagus spears in a single layer in the air fryer basket, making sure they are not touching each other.

Air fry the asparagus fries for about 8-10 minutes or until they are crispy and golden brown.

Your favourite garnishes (we love toasted pumpkin seeds!)

Instructions:

In a large pot, sautΓ© the ginger until fragrant.
Add the pumpkin, carrots, and turmeric. SautΓ© for a few minutes.
Pour in the coconut milk and add water until the veggies are covered.
Simmer until the veggies are soft.
Blend it all until smooth and creamy.
Season with salt and pepper.
Serve hot, garnished with your choice of toppings.
