I also cook a version of this and it's great for eating kale with all its health benefits if you're not too sure about it. I would leave out the honey though. I find the kale's sweetness can then be tasted (better for blood sugar too)
Satay greens!! Another side dish that will blow you away. I have made this hundreds of times at cooking demo’s and had the most hardcore vegetable haters come back for third helpings. Give this one a bash!!
1 large red onion - sliced
2 cloves of garlic - roughly chopped
1 fresh chilli (ideally Thai bird eye) - finely chopped
3-4 handfuls of any leafy greens (cavolo nero and spring greens work best) - shredded
1 teaspoon of honey
2 teaspoons soy sauce
1 heaped tablespoon of peanut butter
Quarter of a teaspoon of Chinese 5 spice
Fresh coriander (optional)
🥦 Saute the onion, garlic and chilli in a little olive oil along with a good pinch of salt, until the onion softens.
🥦 Add the shredded greens and saute until soften and a more vibrant colour.
🥦 Add the honey, soy sauce, peanut butter and 5 spice and mix well.
🥦 Garnish with fresh coriander and serve.
