Courgette and Orange cake 🍰

With two hungry mouths to feed (my partner and son, one is growing upward the other outwards🫢)
I always try to make a couple of homemade, healthier snacks each week for after school/work.

I fancied making a carrot cake but then I realised I had courgettes and blood oranges to use up and as my go-to courgette brownies are a hit in this house ( slightly adapted version of recipe) I decided to give this combo a try, verdict… the cake doesn’t look like this anymore and yes it’s delicious 😋

To make this I used-

-1 large courgette, grated in a muslin and excess water squeezed out
-Grated peel of 1 large blood orange (reserve some for topping)
- 120g sultanas
-100g coconut sugar
- 3 eggs, lightly beaten
-280g gf self-raising flour (doves farm)
-1 tsp baking powder
-130ml olive oil

For the frosting
- 1 tub cream cheese (I used Waitrose organic)
- 100g icing sugar, sifted
- sprinkling of orange zest

Preheat the oven to fan 160 and grease a 1lb loaf tin

Mix the courgette, sugar, sultanas, olive oil and orange zest together and then fold in the flour and baking powder
Cook for 50 minutes, you may need to cover with foil for the last 10 minutes to prevent the top burning

While the cake is cooking mix the cream cheese and icing sugar and put in fridge to chill
Once cake is cooked allow to cool and then add the topping.

Chicken, orange and chickpea salad 🥗

Roasted blood orange and chicken are a match made in heaven!🧡

Blood oranges get their colour from anthocyanins, antioxidants that only develop after temperature drops below zero for at least an hour, these oranges come from the foothills of Mount Etna in Sicily.

*Tip- To keep them fresh and juicy store in the fridge

Goats milk yogurt for protein, nuts for healthy fats, cherries and wild bilberries for antioxidant support🫐

Did you know that bilberries are one of the richest sources of anthocyanins, giving them their blue/black colour, they also contain other phenolic compounds and therefore have amazing antioxidant properties!

These berries can support-

🫐cardiovascular health by lowering inflammation
🫐DNA protection = anti-cancer effects and have been shown in studies to inhibit cell growth and promoted cancer cell death in cultured breast cancer cells.
🫐blood sugar balance- shown to possess antidiabetic properties improving blood sugar control by stimulating insulin secretion

You can buy organic and wild frozen berries from health food stores, a quick and easy way to supercharge your breakfasts and snacks! 🌈

Made a batch of courgette and ricotta muffins for lunch and snacks over the next few days, these can be reheated in the oven 😁

You will need-

🥒2 small courgettes, grated into a muslin and then squeeze out as much water as you can
🥚5 eggs
250g ricotta
120g flour (I used doves farm gluten free plain)
1 1/2 tsp baking powder
1 cup of mixed herbs (I used parsley and chives)
Generous sprinkling of salt and pepper

Preheat oven to 180
Spoon mixture into muffin tins
Bake for 25 minutes

! It’s best not to use muffin cases and just grease the muffin tin as I usually do as the mixture can stick to the paper, but I clearly wasn’t thinking this morning 😝

I served them up for lunch with a big dollop of homemade hummus, a large salad and crumbled feta 😋

I am a holistic practitioner, but what does that actually mean?
Holistic is derived from the Greek word holos, meaning “whole”.

A holistic practitioner considers all aspects of an individual’s physical, emotional, mental and spiritual health.

But If I’m being completely honest, it took a cancer diagnosis to assess my own deep-rooted habits and to realise that I wasn’t looking at my own wellbeing in this way.
I’ve nailed healthy eating with my new found nutrition knowledge I’m going to be fine now, right?
Wrong!

I had simply switched my self-medicating and self-sabotaging addictions of junk food, alcohol, and partying-to a hyper-hyper focus on my work.
In doing so, I continued to ignore the inner support my body needed, leading to burnout alongside my diagnosis.

One year on and I am in a much better place. The anxiety I once struggled with is almost non-existent, and I truly feel that I am on the road of recovery.
Learning more about the nervous system, daily yoga practice, meditation, walks in nature, working more reasonable hours and prioritising time with family and friends has been pivotal.

For this reason, when working with me, a true holistic approach is what I offer.
To thrive in this chaotic and stressful modern world I believe it’s a necessity.

While genetics can predispose us to certain health conditions and addictions, it is our environment that determines whether we tip into certain behaviours and disease, and it takes support and guidance to make certain changes to better our health 🙏

This time last year I had no idea I was a month away from being diagnosed with breast cancer.
I’ve had an unplanned but It turns out a much needed break from social media this past month, I’m ok but I think I’m just coming back up for air and finding my feet again after the most gruelling 11 months.

And thats what I wanted to come on here and share. To anyone who has lost someone to cancer my heart goes out to you, to anyone who has recently been diagnosed or going through treatment right now, I’m sending you love and strength and know that you will get through those tough days.

I’m making it my work to help anyone who has been through breast cancer, to let you know that despite it rarely being talked about while we go through treatment, there are lots of things we can do regarding diet and lifestyle to help our recovery and reduce our chance of recurrence.

If you or anyone you know is facing cancer there is a fantastic support network through various charities and forums, some that have helped me personally include

-Macmillan
-Breast cancer now
-Penny Brohn UK

And of course all of the amazing oncology teams within our hospitals, true angels on earth.
