At one of my recent women’s health events, as we were eating the delicious black rice sushi bowl, with tofu smothered in an exotic mushroom sauce, and a pickled red cabbage and carrot slaw - all created by the participants - I was asked if I eat like this all the time.
Over recent days, I have photographed some of my evening meals and thought I would share them on this, World Vegan Day.
Featured are: Lions Mane Mushroom steak with steamed asparagus, beans and broccoli, grilled courgettes and mashed potato; charred cabbage with dhal, coconut yoghurt, tamarind and date chutney, pomegranate and almonds; sesame crusted tofu, edamame, avocado, gochujang sauce on sushi rice; miso mushroom orzotto with cashew cream and pine nuts.
Not only healthy, protein rich and well on the way to your 30 plants a day, but absolutely delicious too!
