We have moved to a spacious new venue in Walton-on-the-Naze and will be re-launching on Saturday 20th September with a Women’s Health Day!

The day will focus on holistic tools to ease the symptoms experienced with menopause, Polycystic O***y Syndrome, fibroids, PMS, endometriosis and menstrual issues.

Participants will take away a DIY “toolkit” of information you and your loved ones can use to ease symptoms, using:
Nutrition including plant-based probiotic foods, phytoestrogens, mycotherapy (medicinal mushrooms)
Organic supplements
Ayurvedic remedies
Herbal remedies
Essential oils
Hand reflexology
Earthing
Meditation and breathwork
Forest therapy
Fasting
Red light therapy
Massage

Participants will have the opportunity to cook vegan, gluten-free whole food recipes designed to balance hormones which we will sample at a shared lunch. There will also be opportunities to try many of the “tools” during the day.

Representatives from local wellness businesses will also be showcasing their products and offering samples and discounts.

I recently had the privilege of dining at Gauthier Soho and the experience has been truly inspirational in so many ways!
Tonight, instead of aubergine curry, we had aubergine slices roasted with whole Indian spices and truffle oil, on a bed of lemon, chickpea and cashew purĂŠe, topped with steamed green beans and crushed tomatoes roasted in turmeric, black pepper, ginger, cardamon and coconut oil. The garnish is a mango and cucumber salsa and the dish is accompanied by a wild mushroom gravy. It was very tasty!

Some leftover pastry and vegan quiche custard, along with some creative inspiration overnight, turned into these tasty olive and sun-dried tomato quiches with an almond, oat, flax and chia seed crust.
Served with a side of sweet potato, artichoke and red bean salad, garnished with toasted pumpkin seeds, walnuts, pomegranate jewels, fresh mint and basil.

Jackfruit is a great meat substitute because of its fibrous texture.
Here it is teamed with chickpeas, red pepper and carrots, coriander and spring onions to make a delicious vegan alternative to Jamaican oxtail stew. On the side are spicy rice with black beans, and pan-fried plantain.
This meal is rich in protein, fibre, calcium, as well as phytoestrogens, making it an excellent nutritional support for women going through the menopause. Clinical trials suggest that phytoestrogens also support prostate health in men.

Breaking an 18-hour fast with a high protein, whole food plant-based feast! Scrambled tofu, steamed kale, chestnut mushrooms, roasted chickpeas, olive and rosemary sausage, sourdough toast, raw cacao with oat milk and sparkling water with apple cider vinegar. No oil, no refined sugar.

When you’ve just spent one of the hottest days of the year driving on the motorway for 6 hours, the last thing you want to do is spend another hour in front of the stove cooking a meal.
With the help of my food processor, this came together in minutes! A chickpea tuna open sandwich, flavoured with nori, capers, sea salt, fresh dill and lemon, on a gluten-free sweet potato bread roll, with a side of coleslaw and cashew mayo. Perfect for a heatwave!

The leftovers do not in any way represent the amount of food that was eaten over the past two days - more my desire to make sure that no one went hungry!
We had Jamaican cornmeal porridge pudding with fresh mango, scrambled tofu and kale with smokey butter beans, quinoa salad with spicy chickpeas and a garden full of fresh veg, and the magnificent pizzas. We didn’t manage to get to the chickpea tuna with gluten-free bread rolls and coleslaw with cashew mayo - that will be dinner when we reach our destination this evening.
I’m going to miss my little kitchen away from home - thank you Graysonside Guest House for a wonderful stay in your well-stocked, beautiful apartment.

Playing personal chef in the Lake District for the next few days!
It was an eight-hour drive to the accommodation so dinner was a hastily thrown together gluten-free pizza - a light oat and sweet potato base topped with cashew cheese, sautĂŠed kale, artichokes, sun-dried tomatoes, jalapeĂąos, Kalamata olives, capers, chili flakes and a drizzle of truffle oil.
Stone-baked to perfection in the portable pizza oven - so good!

The last few months have been incredibly busy, especially the past two weeks. But today I finally returned to my happy place, for a magnificent fusion Sunday dinner - if I do say so myself!
The starter was honeydew melon infused with a maple syrup, fresh ginger and white rum marinade, then lightly sautĂŠed in a drizzle of coconut oil and chilli jam.
This was followed by crispy sweet chilli tofu stirfry, with a sneaky dash of homemade Bajan pepper sauce from the test kitchen for a recent Caribbean cooking class, and accompanied by turmeric rice.
The dessert selection comprised a ´no refined sugar’ strawberry and mango strudel with a dollop of cherry yoghurt, scoops of mango and raspberry sorbet - and a passionfruit and mango mochi from Aldi UK

Gluten-free, pan fried, plant-based Bajan fish cake, with pepper sauce. I fondly remember trying the real thing on Fish Friday when I was in Barbados many years ago. This one tasted just as good - but much healthier!
