A great day overall for my sugars today – nearly 100% in range. I was able to enjoy an appropriately adapted version of my favourite meal – spaghetti Bolognese. More aptly called, edamame bean fettucine Bolognese in my case. My levels spiked sharply but came down quickly to a much better and more stable level, allowing me to relax for the rest of the day. A very in-range day today in terms of sugar readings! I had a sharp spike after tea however I did not go above the tight range of 4-7.8mmol/L. I managed to stay fairly stable throughout the day and night after a day of yummy meals.

Simple swaps meant I got to enjoy my favourite meal – spaghetti Bolognese. Though really, it's edamame fettucine Bolognese. After a challenging morning in terms of sugar readings, I managed to get back on track for the rest of the day. This meant I got to enjoy tea without worrying about my sugars. I had pork loin steak in homemade pork gravy with some plainly boiled carrots and halloumi.

A more difficult morning today - how would you have dealt with this? I woke up low and had to decide what to have for breakfast. I opted for a high protein option (just steak and salad with some red pepper and tomatoes). In doing this, I managed to stablise my sugars for the rest of the day - preventing that famous overcorrection we all have been guilty of. Even with a HbA1c of 5.1%, I still struggle with the common challenges diabetics face, it's how I deal with them that matters.

A more challenging day for sure! I woke up low and had some steak and salad for brunch to see if I could plateau my sugar readings a bit. Luckily, it worked. I was able to stabilise my sugars for the rest of the day. This meant I could then enjoy tea: a pork loin steak in pork gravy alongside some boiled carrots and deep-fried halloumi. I did not spike after tea, and managed to soundly go to sleep knowing my sugars were stable! Even with a HbA1c of 5.1% I still have my highs and lows, it's how I deal with them that counts. This was my only meal today, and I enjoyed with it deep-fried halloumi in lard. The extra fat caused some delayed digestion, meaning I had a low sugar reading afterwards. I managed to get sugars back up without over-correcting and remained stable throughout the night!
