We all want to learn the best things to do for health; however, it is hard to learn anything with so many conflicting concepts. Let us go through some basics with explanations that might help to sift out what might be best to incorporate into daily life.

In life we see water droplets beading together on a freshly waxed car hood. In the kitchen we see little islands of oil floating on the surface of a pot of chicken soup on the stove. This is basic molecular chemistry, water likes to be with water and oil like to be with oil. Water and oil are not friendly to each other. We know this in cooking when we try to mix (emulsify) oil into water. A lot of whisking or whipping but soon it will separate away from each other. Believe it or not, this is the basic component of health. Our body is 65% water and will not mix with the oils that make membranes to hold the water in bladders, eye balls, arteries, bile ducts and our brain. Oh, the brain is actually 84% water. How is it that we don't leak when we go bungee cord jumping our brain doesn't leak out?

Oil likes oil so much that it can cause a barrier to stop leaking water. Sounds simple but there is a catch. We need to breathe oxygen through the membrane barrier without leaking the water. Some of us leak as seen in edema of the ankles. Yup, leaky oil down there in those swollen legs. So here you have it at the first step. What type of oil is in your diet? The good type that doesn't leak water but allows oxygen to breathe through or the bad type that cannot breathe and suffocates the tissues so that they swell up? What is the difference between oils?

Omega-3 animal oils versus omega-6 plant oils. Yes, plants do not breathe through their oil membranes and so vegetable oils block our oxygen and we puff up. Wait a minute, plants have omega-3 oils, so what is wrong with them. Well, in biology the plant omega-3 oils still do not allow oxygen to breathe through until they are converted into the type of triglyceride that can. Whoa, triglyceride, what's that? A bad oil that the body cannot use, or hardly can. Only 1% of plant omega-3 oils can convert into the type that is useful for breathable oil membranes.

Well then, why are plant omega-3 oils so advertised and sold in stores? Because they never go rancid and can stay on the shelf for years and years and years. An animal omega-3 oil is very living and with that cannot hang around without fresh oxygen to stay, well, fresh. Butter is a good example and needs to be refrigerated. Vegetable oil can hang around for years at any temperature and is low cost because it lasts forever. Corn oil, coconut oil, soybean oil and all of the vegetable oils are from a plant that does not breathe through membranes. In fact, if a plant were to breathe it would loos water, dehydrate and quickly die in the sunny fields. We can sweat to cool and run to find a drink of water when we want. A plant, how does it move into the shade or go find a running creak of water to quench it's thirst. Yes, plants need water but if they lose any in the hot sun they perish, so they purposefully make oils that cannot leak any air, water or nutrients. Eating plant oils is a major way that we age quickly, feel bloated and leak water. A major symptom of leaking is a stroke. A minor symptom is edema of the ankles.

Being healthy is
-- less about what to eat
-- more to do with what you do not eat
Make simple changes for the foundation of your health.
Improve your oil.

Stop buying jugs of oxygen blocking vegetable oils, replace them with packages of refrigerated butter, lard, tallow and duck fat. Keep the oxygen flowing.
Maintain the 65% of you that cannot leak but needs to breathe.

" Eye" love taurine ....

As we age, maintaining good vision is critical for enjoying a great quality of life. Yet, eye health is something a large majority of the population does not think about. Your eye health is directly related to your lifestyle and there are many steps you can take to ensure healthy eyes.

Taurine is found in high concentrations in the eye and is the most plentiful amino acid in the retina of all animal species. Taurine has multiple functions to maintain normalretinal structure and function. Decreased taurine levels in the eyes are linked to the disease retinitis pigmentosa. Depletion of taurine leads to the degeneration of the photoreceptor cells.

While taurine is known to protect both the body and the eyes from various toxins, researchers are also speculating that taurine may be helpful in preventing cataracts!

Glutathione (GSH)

A complex story with a simple statement: “every cell in our body contains glutathione and when levels are low we become sick”. Glutathione, pronounced ‘glute-a-thigh-own’ (abbreviated GSH), is not well known and underestimated by many. It is made from three amino acids by plants and animals and every cell in our body has it for protection. One measure of a cell’s health and function can be based on the level of GSH, making it the most important molecule in our body.

Why is it so important? Cells are constantly being made and replaced. This daily production of a new cell requires GSH and is important in making red and white blood cells. GSH then becomes a key element for the immune system to function properly, particularly for the lymphatic system and lymphoid cells. GSH is also used up in the body when a cell finishes its’ life span and dies. There can be a release of toxins, that the body cleans up by using GSH and the white blood cells of the lymphatic system.

Many stress factors in our environment can shorten the life span of cells and tissues. This can increased the rate of aging exponentially if GSH levels are low in the body. When GSH levels are low we have more health issues that you might realize.

As Glutathione is such an important element in our body it is used up rapidly and must be constantly replaced though proper diet and supplementation.

Other important sulphur based molecules in the body are alpha lipoic acid, methyl-sulfonyl-methane (MSM) and taurine. Stay tuned ... more about these to come!!!

What if...."gluten intolerance" is really "glyphosate poisoning"?

Glyphosate is a herbicide initially introduced by Monsanto as "Round-up".

The use of glyphosates has been increasingly significantly since 1973; Originally used to prevent weeds, somewhere along the way, it was discovered that a pre-harvest spraying of glyphosate directly onto the crops made for an easier harvest, as it desiccates the material. WHEAT and CANE SUGAR are the two foods most often treated in this manner.

Monsanto applied for the patent on glyphosate with full knowledge that it worked by blocking the shikimate pathway of plants and certain bacteria. Therefore, since people are not plants or bacteria, glyphosate must be safe, they told the FDA.

What Monsanto did not disclose is that the bacteria in a human gut all have shikimate pathways. This is huge. Without gut bacteria, people become very ill and malnourished, develop antibodies to their own organs, mentally depressed, full of yeast and other pathogenic bacteria, and mineral deficient. Nerve transmission fails and energy is gone. The mind cannot focus. Children get labeled at school as having behavior problems. Adults think they are crazy and run to the Prozac.

Part 3 of the good, so-so and bad amino acids series.

The bad amino acids

1. Branched chain amino acids: stiffens muslces, body builders love this, but causes heart damage, softened by taurine

2. Lysine: the deadliest as this amino acid is mostly ammonia to cause nerve and liver damage, high in whey protein powder, stops nitric oxide and causes infertility. Note that body builders are mostly bald from whey protein and chronically injured due to stiffened muscles.

3. Amino acids with double carboxylic acid: such as aspartate, aspartic acid, glutamate, glutamic acid, directly harm tissues, the liver uses SGOT - Serum Glutamic Oxaloacetate Trans-amin-ase to remove the glutamates, this is also named AST - Aspartate Trans-amin-ase. The double ended carboxylic acid amino acids hyper stimulate the body into spasms, high blood pressure, anxiety, panic, attention deficit, short attention span, brain fog, lack of memory, difficulty with speach and stroke or heart attacks. The 'health department' says it is safe to eat all the glutamates and aspartates as you like, follow the money.

Part #2 of the good, so-so and bad amino acids

The smaller than amino acids carbon chains that are good .... I'm calling these "so-so" amino acids, as they aren't technically amino acids themselves, but are important carbon chain that make up the structures of good amino acids:

1. vinegar; 2 carbon chain - stops blood clots, used in IV for chelation therapy to pull calcium out of scar tissues, used in diclofenac and other anti-inflammatory drugs, improves circulation, stops swelling and edema.

2. propionic acid; 3 carbon chain - the back bone of histidine, used in ibuprofen, anti-inflammatory, anti-parasitci, anti-bacterial, highly concentrated in red blood cells as part of the immune system.

3. butyric acid; 4 carbon chain - found in butter that is made from cream, i.e. the milk oils that keeps babies healthy

4. pentanoic acid; 5 carbon - the back bone of arginine and our muscles.

The good:
1. histidine; there are six million in each red blood cell to give blood it's immune system, one trillion red blood cells and quad-stupid-bazillions of histidine when we are healthy circulate every minute.

2. taurine; is dumped into the bowels to clean toxins and bad bacteria, loads and loads needed.

3. creatine; yes this is an amino acid (1 tsp is found in 1 kilo of beef) increases IQ.

4. glycine, cysteine, glutamate together make glutathione; combats vegetable oil inflammation.

5. cysteine; by itself binds to minerals, including iodine, iron, zinc... essential for life.

My adventures in biology for health have become very rewarding. In the past year I have contemplated why we eat so much food? What are we looking for from out diet?

Well, I think I have narrowed it down significantly. We need certain types of sugar, oil and amino acids. These are basically glucose/starch, animal oil/cholesterol, and about eight amino acids.

The amino acids are in 2 groups, those that can lead to disease and those that can prevent disease. Stay tune over the next few days for 3 related posts detailing the best, good and the bad amino acids.

Taurine is one of the only amino acids that only stays in body fluids, where the blood does not go, and is anti-infective, in places like the fluids of the joints.

Don't be fooled into thinking this lemonade is any healthier than soda! It's packed with high fructose corn syrup and artificially colored with yellow #5.

It's also got the toxic combo of sodium benzoate and vitamin C (from the lemon juice) - which can create benzene in the bottle (a carcinogen).

SUGAR EDUCATION: Artificial Sweeteners

In theory artificial sweeteners sound like a good alternative to the real deal. When used in moderation and not on a daily basis, they aren't too bad. However some synthetic sweeteners can be very dangerous, especially when used in combination with caffeine.

Specifically aspartame is very harmful with caffeine. When combined, they over stimulate brain cells to create a "buzz" effect. But then bc of the over stimulation the cell simply stops functioning and dies. Is having a low calorie sweetener worth killing brain cells??? It should be obvious answer! Aspertame is most commonly found in diet/no sugar sodas.

Overall, artificial sweeteners actually contribute to weight gain and a higher chance of becoming diabetic. In fact 4 out 7 people who consistently use artificial sweeteners develop impaired glucose metabolism, which is a warning sign for type 2 diabetes.

Manufactures claim that the gut does not absorb these sweeteners, but studies have proved otherwise. They definitely get digested into your system while killing off good bacteria. Sweet n Low is found to have some of the worst side effects. Others symptoms that can be caused are chronic headaches, mood changes, difficulty concentrating, depression, body aches/pains, and in bad cases seizures.

Xylitol or glucose cubes are a much healthier and safer option!
