It's almost the weekend and we're all ready for a bit of chocolatey indulgence!

And guess what? It's low on sugar and healthy too ;)

SweetPotatoBrownies
(makes 16 brownies)

Ingredients:
1 cup self-raising flour
1/4 cup veg oil (or melted butter)
skimmed milk
2 small eggs
2 medium sized sweet potatoes, boiled, peeled and mashed
1/2 cup of granulated sugar
1-1.5 cups of cocoa powder (depends how chocolatey you want it - i used about 1.5)
1/2 tbsp vanilla extract
1/4 tsp salt
1/2 cup of plain/semi-sweet chocolate chips

directions:
mix it all together and put it in an oven.
JUST KIDDING :P
1. Preheat the oven to about 170C or gas mark 6. In a large bowl, mix the oil and sugar together and then incorporate with the mashed sweet potato. Add 2 eggs and vanilla extract and mix well.
2. in a separate bowl, whisk the flour, salt and sifted cocoa powder. Set aside.
3. Mix the dry and wet ingredients together. I usually do half the dry ingredients first, then mix, then add the rest. If the mixture is getting too dry add a good splash of milk (i probably used about 1 cup of milk in total) the end batter should be wet but not too easy to whisk through.
4. Put in the preheated oven. I baked it for about 20 mins, checking on it twice in between.
5. If you think its done, test it with a fork and it should come out fairly clean but don't be alarmed if you have a bit of wet chocolate on the fork as that might be the melted chocolate chips.
6. Eat! they taste even better after a day ;)

Here's a recipe for scampi shrimps! Easy weeknight meal.

Ingredients:
1 lb of shrimps
2 gloves of garlic
1 tbsp of butter
1/4 c white wine
2 tbsp lemon juice
A handful of parsley
Salt and pepper

Directions:
1. Heat the pan with butter and olive oil. Stir in garlic. Satueed until fragrant.
2. Add in white wine and lemon juice. Cook for a minute or so.
3. Stir in shrimps until cooked.
4. Add salt and pepper for taste.
5. Garnish with parsley.

Here I paired the dish with quinoa, asparagus and tomatoes. You can pair it with anything you like. Enjoy! 😋

Happy weekend everyone!! Here's a super delicious and healthy recipe for you all - crab cakes!!

Ingredients (4 medium sized crab cakes):
1/3 bread crumbs
1 egg
1 can of crabmeat
1/3 c cilantro (cut into small pieces)
1 shallots (in small dices)
1 tbsp mustard
1 tbsp mayonaise

Directions:
1. Mix all ingredients together in a mixing bowl until everything combines.
2. Divide the mixture into 4 patties with a big spoon or with your hands.
3. Heat the pan in low heat with 1 tbsp of olive oil.
4. Once the pan is heated, fry the patties (3-5 minutes for each side).

Spinach & broccoli soup
Ingredients:
1 bunch of broccoli, cut into tiny pieces in 6 cups
6 cups of spinach
1 leek, cut the white and pale green parts into thin slices
1/3 c of parmesean cheese
3 c of chicken stock or water

Directions
1. Heat the pan in medium heat with olive oil. Cook the leek for four minutes until it is soft.
2. Add in chicken stock or water. Boil for about 2 minutes and add in broccoli. Cook until it is soft.
3. Turn off the heat. Add in spinach and wilt them.
4. Add parmesean cheese into the mixture.
5. Transfer the mixture and puree it in a food processor. Be careful not to overflow it, puree part of it at a time.
