CHOCOLATE COCONUT PROTEIN CRACKLE 🥥🍫.

INGREDIENTS:

FOR THE BASE
1 cup dessicated coconut
1 cup puffed brown rice
2 medjool dates
4 tblsp cacao powder
40g Power Plant Rich Chocolate
2 tblsp rice malt syrup
1 tsp vanilla extract
1/3 cup coconut oil (melted)
40ml almond milk.

FOR THE TOPPING
1/3 cup coconut oil
1/3 cup cacao powder
2 tblsp maple syrup
½ tblsp dessicated coconut (for sprinkling).

METHOD:
1. In a food processor, combine dates, cacao, protein, rice malt syrup, vanilla extract and coconut oil. Blend until smooth.
2. Transfer to a bowl and add coconut and puffed brown rice, stir to combine.
3. Add as much almond milk as needed to create a ‘doughy’ consistency. This can vary depending on your protein powder, but 40ml was perfect for this.
4. Pour into a square tin lined with baking paper. Press mixture into the base, then pop into the freezer while you make the topping.
5. In a bowl melt coconut oil, then add cacao and maple syrup and whisk to combine.
6. Remove tray from freezer, and pour topping mixture over the top. Spread evenly with a rubber spatula.
7. Sprinkle desiccated coconut over the top, then pop tray back into the freezer to set.
8. Once set, cut into 16 squares and dig in!.
