The Mirjam’s kitchen classic🌼 This cake has a special place in my heart since it was the first cake I made after starting my little homebaking business and it’s also the first cake recipe I came up with by myself.
Since late August this year, I’ve been making at least one of these cakes every week. It makes me so happy when I realise that it’s still so popular.
The flavours are always the same; lemon sponge, raspberry mousse and creamy mascarpone icing. But as you can see, they never look exactly the same. Sometimes it’s pink and purple, sometimes white and yellow or white and blue, I always try to find out the birthday girl’s/boy’s favourite colour. Sometimes it’s gluten free and as if this week it can also be heart shaped💛 Decorations also vary as it depends what happens to be growing in the garden that particular day. And then I just let my hands work away and try not to think so much. It’s always fun to see the final result. As I gently place the cake in the box and get it ready for delivery/collection, I feel both lucky and grateful. Thank you so much to each and everyone of you💞
