๐ฅฌ๐ถ๏ธPork Larb with peppers ๐ถ๏ธ๐ฅฌ

๐Ingredients ๐
500g lean pork mince
(5% fat or less)
1 tbsp chopped garlic in vinegar
1 tbsp chopped ginger in vinegar
1 level tbsp chilli paste
500g frozen sliced mixed peppers bunch of spring onions, chopped small pack fresh basil, roughly chopped
small pack fresh coriander, roughly chopped
juice of 1 lime
2 tbsp light soy sauce (or tamari), plus 2 tbsp to serve
4 x 200g packs frozen plain rice
1 large cucumber, halved lengthways, deseeded and thinly sliced
2 Little Gem lettuces,

Method โ
1. Put a non-stick frying pan over a high heat, add the pork and cook for 6 minutes or until cooked and golden, breaking up the mince with a wooden spoon as you go. Add the garlic, ginger and chilli paste and stir for just 1 minute, then tip in the peppers and spring onions and cook for 4 minutes or until the peppers are softened. Stir through the herbs, lime juice and soy sauce and check the seasoning.
2. Microwave the rice according to the pack instructions.
3. Divide the pork larb, cucumber and rice between bowls and serve with the extra soy sauce and the lettuce leaves for scooping the mixture into.
