Walnut or Pecan Sticky Buns from Darina Allen’s ‘Forgotten Skills Cooking. Absolutely delicious 😋
This was my first time to make these and they were quite tricky but worth it. My Forgotten Skills Cooking book is one of my all time favourites 🙌

Healing properties of Seaweed 🌊

Irish Carageen has been used as an ancient remedy for colds and coughs for centuries. It helps to clear and support lungs and fight respiratory symptoms. 🫁

I always find it amusing that ancient remedies are called ‘alternative’ when modern medications are so new… surely they should be alternative to what has been in existence forever 🤔

Carageen is available to buy in many small vegetable shops, markets and good health stores around the country 🇮🇪

Green Tea 🍃

Growing up in Ireland it was considered odd to drink any other tea other than regular black tea so it has taken a few years for my Irish tastebuds to switch to herbal teas. 🫖☕️

They all have their tyerapeutic benefits whether for sleep, digestion or immune health however Green Tea comes with some powerful health benefits which is why I found myself one I truly could enjoy while reaping the benefits 😊

I’m forever saving recipes here with best intentions but I’m so glad I tried these Peanut Butter Cups which were an absolute winner. Simple, fast and delicious 😋thank you

1.5cups Oats
1 cup crunchy granola
3/4 cup Peanut Butter
1/2 cup raw Honey
300g Dark Chocolate
Sea Salt

Mix all ingredients (except chocolate and sea salt) Press into cupcake cases. Pour melted chocolate on top and a tiny pinch of sea salt on top. Leave to set in fridge. Enjoy 😘

I used Flahavan’s Organic Jumbo Oats, local Honey, Meridian Crunchy Peanut Butter, Home Made Crunchy Granola, Tony Chocolonely Dark Chocolate and Celtic Sea Salt.

Autumn Fruits 🍎

Apple and Raspberry Crumble must be the most yummy and satisfying of desserts 🍓

Layer apples at base of greased dish, pour over juice and rind of an orange. Sweeten with some sugar / stevia. Add another layer of raspberries (frozen if not homegrown). Top with crumble:
100g flour
100g almond flour
25g brown sugar
Rub in about 50g butter and mix together with some chopped walnuts and sprinkle of ground cinnamon. 🌰

Pop into hot oven for about 20 mins until lightly browned on top. Enjoy served with a dollop of fresh cream or good quality ice cream. 😋

It’s all about balance when putting a meal together.
Smoked Mackerel - omega 3 and protein
Feta …. More protein and healthy fats
Lots of colourful organic salad creating a rainbow of colour providing carbohydrate, antioxidants, micronutrients and feeding the good gut bugs😀
Olive oil dressing bringing more healthy fats providing satiety 🤗
