Have you ever thought of T1D life like ridding a Ferris wheel 🎡!!??

Round and round you go.
Each turn brings something new - a challenge, a heaviness, a worry…
But also a tool, a lesson, a support, a person who helps you keep going.

Between the chaos of getting our house extension ready for Christmas and soaking up the magic at my favourite place the Galway Christmas Market, this thought landed with me.

Diabetes isn’t always wild rollercoaster highs and lows. Sometimes it’s circular. Repetitive. Ongoing.

And during Christmas It can feel extra overwhelming🎄‼️

The parties.
The sweets and treats.
The blood sugar uncertainty.
The mental load no one else sees.

But instead of building walls this season, what if you picked things up along the way?

If you’re looking for a lower sugar festive treat - I got you covered chocolate 🍫🍓

I’m resharing this Christmas dark chocolate bark because it’s easy to make, looks super festive and is glucose friendly.

Adding in roasted pistachios and freeze dried unsweetened berries packs it with a bit of protein and fibre, making it better for your glucose levels.

And you can make it in less than 15 minutes. It’s perfect for a guilt-free nibbling, colourful DIY Christmas gift or party treat.

🍫Pistachio + Raspberry Dar Chocolate Bark🎄

Carb info: 12 servings, about 10g carbs per piece

Ingredients:
• 250g 70% dark chocolate (better quality =better taste)
• 10g (1/2 cup) freeze-dried raspberries - I used .miklas no sugar added berries
• 2 tablespoons chopped pistachios
• Optional: 1 teaspoon coconut oil (for smoother chocolate melting)
• Optional: A pinch of sea salt

Instructions:

Melt the chocolate (add coconut oil if you like) and spread it on a lined tray. Sprinkle the raspberries, pistachios, and sea salt on top. Let it set in the fridge for 30 minutes, then break into pieces.

Have you ever had one of those serendipitous moments? How about a diaserendipitous moment!?

I had one last night at Thanksgiving dinner. We sat next to a couple who were travelling through Ireland, and the husband started chatting about how they were going to a sporting event that was sponsored by a diabetes tech company.

Then he said something like, “I really want to go up because I have this tech…” and he lifted his shirt slightly to show his insulin pump.

And I said, “Wait — me too.”

I showed him mine… (don’t get too excited now 😆) and we had the exact same pump.

Out of all the people we could have been seated beside with a lot of people packed into a pub for a thanksgiving feast… it was them. Two strangers connected by one invisible thread: diabetes.

Me 10 years ago wouldn’t have had this moment.
I would have been hiding my pump.
I would have been covering my sensor.
I would have been anxious someone might see it or ask me about it.

I carried so much shame then. So much fear of being “seen.”

But over the years, finding my voice, growing in acceptance, and allowing myself to be more open about my diabetes has changed everything.

Moments like this remind me how powerful it is when we stop hiding.

When we own our story. When we let ourselves be part of the diabetes community instead of quietly surviving it.

Connection happens when we let ourselves be seen.

If pumpkin and crumble came together, they’d make a pumpkin crumble — and that’s exactly the flavour I’m going for this Thanksgiving.

I’m living in Ireland but celebrating my American roots, and enjoying — yes, enjoying! — the festive feasts, because people with diabetes absolutely can enjoy treats.

And of course, I’ve made this pumpkin crumble with a glucose-friendly twist, so your blood sugars won’t be negatively impacted.

🎃Pumpkin Crumble🥧
Servings: 10
Carbs: ~32g per serving

Blend together filling ingredients:

✔️ 750ml (15 oz can) pumpkin purée (or roasted/puréed pumpkin)
✔️ 150ml (2/3 cup) maple syrup
✔️ 1 egg or vegan egg
✔️ 110ml (1/2 cup) unsweetened soy or almond
✔️ 1 teaspoon cinnamon
✔️ 2 tablespoons cornflour or arrowroot
✔️ 1 teaspoon vanilla

Mix together crumble in a separate bowl:
✔️ 80g (1 cup) oats
✔️ 50g (1/2 cup) sliced almonds
✔️ 70g (2/3 cup) almond flour
✔️ 110g (1/2 cup) butter or melted coconut oil
✔️ 1 teaspoon cinnamon
✔️ Pinch of salt
✔️ 100g (1/2 cup) sweetener (stevia, xylitol, coconut sugar, or rice syrup)

Method
1️⃣ Preheat oven to 175°C (350°F)
2️⃣ Add the filling to a pie pan and top with the crumble.
3️⃣ Bake 40–45 minutes, until the filling is set. Serve with whipped cream or coconut cream.

World Diabetes Day always reminds me how powerful we are when we come together. No matter what type of diabetes you live with, this day is our moment to use our voices — to raise awareness for what diabetes is and is not, and to push for the care, support, and tech we all deserve.

At Dip for Diabetes, we definitely went blue… nearly right down to our toes in that freezing water! But the real highlight was a little 4-year-old boy, diagnosed with type 1 at just 2 years old, running up with the biggest smile when he spotted the blue circle and our CGM sensors. “Hey, I’ve got one of those!” he said.

And in that instant, his mum smiled too - a smile filled with hope. That’s what days like this are all about.

Thank you to everyone who showed up, supported, dipped, or cheered us on. Next year will be bigger and better… though maybe not warmer!

It’s still Diabetes Month, so keep using your voice. Advocate for yourself. You deserve it. 💙

I nearly forgot my diaversary this year — my daughter had to remind me! “Hey Mommy, what about your cake?” 🥰

Over the years I’ve hidden my diabetes, pushed my body to the limits, and learned through the years that acceptance doesn’t mean giving in — it means living beyond diabetes.

Today I’m just being. Being with it. Being grateful. And yes, celebrating with a sea dip and homemade chocolate cake. 🎂🌊

For me Halloween is a time to dress up as someone - something else.

Maybe it’s a bit of escapism and maybe it’s to get away from diabetes life. To pretend for a moment that it doesn’t exist.

Because living with type one diabetes comes with its own monsters - the limiting beliefs - the shame and guilt - the heaviness.

Though I’ve realised that it takes time to unmask these monsters 👹 to gain acceptance of my condition.

So this year Cruella is the mask I’m putting on but she’s not taking away from anything that I am even with T1D.
