Antioxidants , healthy fats play a crucial role in promoting skin health by neutralising free radicals and protecting the skin from Damage.

1. Berries - apart from berries like blueberries or strawberries even our Indian gooseberries (awla) rich in antioxidants including vitamin C and flavonoids . Vitamin c is known for its role in collagen synthesis which helps maintain the elasticity of the skin , also protecting against the oxidative stress .

2. Dark leafy vegetables
Spinach, kale, Swiss chard are excellent sources of antioxidants including vitamin C,A , E which contributes to skin health by promoting cell turnover , protecting against UV damage , and maintaining skin moisture. The high chlorophyll content also has detoxifying properties.

Bad food choices can wreak havoc on your skin, excessive processed foods call lead to inflammation, breakouts and or mature ageing, a diet lacking in essential nutrients like vitamins, antioxidants and healthy fats can leave the skin looking dull, dry and tired. Pancakes ( gluten free and refined sugar free , dairy free)

Benefits - good source of omega 3 fatty acids making it good for brain function and heart health
Rich in good fats , protein , soluble and insoluble fibre , helps in regulating digestion
Rich in vitamins , polyphenols , essential nutrients like iron , zinc, magnesium, copper , potassium
Contains antioxidants and anti inflammatory properties

Recipe :
Dry ingredients
- 1/2 cup gluten free rolled oats
- 1/2 cup blanched almonds flour (.in )
- 1 tb sp raw cacao powder (.in )
- 1 tsp flax seed powder ( grind raw flax seeds In a mixer )
1/2 tsp baking soda
1/8 th tsp pink Himalayan salt

Wet ingredients
- 1 tb sp cold pressed coconut oil ( use cold pressed olive oil or peanut butter if you want to avoid oil)
- 1 tb spoon soaked cashews ( about 6-7 )
- 1 tb sp chopped or grated Beetroot
- 2 tb sp jaggery powder ( I used organic jaggery powder )
1/2 cup water ( room temperature)
1/2 tsp vanilla extract

Optional ingredients
- 1 tb sp soaked and chopped walnuts
1 tsp raw cacao nibs or dark chocolate chips )
1 egg ( choose for a free range egg, antibiotic free)

Method :
In a bowl , add flour , salt , baking soda , cacao powder .
Mix well and keep aside .

In a grinder , add all the wet ingredients from the list and blend into a smooth paste .
Empty this in a separate bowl , if you are using egg amd chocolate chips or walnut , now is the time to mix them with the wet ingredients .

Finally , combine wet and dry ingredients together . Mix well .
The batter should be coating the spatula evenly , add little water if too thick .

On a medium hot pan , pour about 1/8 th cup of batter , cover and cook on both sides , flipping in between to get a nice brown golden colour .

Serve immediately with a drizzle of honey or maple syrup on the top
