Keto Breakfast Scramble with Sausage and Vegetables
This recipe is a flavourful and filling scramble packed with protein and healthy fats to keep you energized throughout the morning.
Ingredients:
2 tablespoons unsalted butter
4 oz spicy Italian sausage (casings removed)
½ cup chopped bell pepper (any colour)
¼ cup chopped onion
½ cup chopped mushrooms
3 large eggs
¼ cup shredded cheddar cheese
¼ cup cherry tomatoes, halved
Salt and freshly ground black pepper to taste
Optional additions: chopped fresh spinach, chopped avocado, crumbled cooked bacon
Instructions:
Heat butter in a large skillet over medium heat. Add the sausage and cook until browned and crumbled, about 5 minutes. Drain any excess grease.
Add the bell pepper, onion, and mushrooms to the pan and cook until softened, about 5 minutes.
In a separate bowl, whisk together the eggs. Season with salt and pepper.
Push the sausage and vegetables to the sides of the pan, creating a space in the center. Pour in the whisked eggs and scramble until just set, about 2-3 minutes.
Stir in the cheddar cheese and cherry tomatoes. Cook for an additional minute or two, until the cheese is melted and the tomatoes are warmed through.
Season with additional salt and pepper to taste. Serve immediately.
Tips:
Feel free to adjust the vegetables to your preference. Other keto-friendly options include broccoli florets, chopped zucchini, or asparagus spears.
For a vegetarian option, omit the sausage and increase the amount of vegetables.
To make this recipe ahead of time, scramble the eggs and cook the vegetables the night before. Then, simply reheat everything in the morning.
Add a dollop of sour cream or guacamole for extra creaminess and healthy fats.
