This sprouts salad recipe is gluten-free and protein-rich making it ideal for weight watchers. You really just have to bring all the ingredients and toss them together to get this super nutritious recipe.

Serves 1

Mixed sprouts (mung, moth/matki, masoor, black chana): 1 bowls

Overnight soaked almonds, walnuts, groundnuts, pumpkin seeds and sunflower seeds: 1 handful

Overnight soaked figs (2) and raisins (10), chopped

Dates, chopped (2 or 3)

Freshly grated coconut: 1 or 2 spoons

Pomegranate: 1 or 2 spoons

Chopped onions, tomatoes, green chillies and green coriander: 1.5 bowl

Salt, pepper, little lime juice and chat masala to taste.

Feel free to add any veges of your choice and experiment.

Creamy dairy-free mushroom soup.
Ingredients: (Serves 3)
Button mushrooms 15 to 20
Cashewnuts 10 to 11
Onion 1 large
Garlic 1 small pod
Corainder 1 handful
Oil 1 small tsp
Salt to taste
Black pepper to taste
Chilli powder to taste
Water 1 glass
Soak the cashewnuts for 4 to 5 hours. Blend them in 1 cup of water to make fresh cashewnut milk.
In a tsp of oil, saute onions and garlic till they turn golden brown.
Now add the mushrooms and saute for 2 to 3 minutes. Add green coriander.
Add salt, red chilli powder and black pepper powder.
Next, add the cashewnut milk and bring to a boil. Turn off the heat.
Take out half the ingredients and blend them well. Mix it all back together. Add more water to bring to desired consistency.
Reheat just before serving.

This carrot dessert recipe is "plant-powered" and made with nutritious and clean ingredients like cashewnuts, coconut, jaggery and ofcourse, carrots.

It does not contain any added fats which makes it an ideal choice for those watching their weights.

For those with lactose intolerance, digestive issues and those looking at reducing their exposure to added antibiotics and hormones, this dairy-free version is a melt-in-the-mouth treat! There are several other important health reasons to consider going on a dairy-free diet, including to help control inflammation, manage respiratory symptoms, and to balance hormones. 

Ingredients:

Grated carrots - 2 cups heaped
Soaked cashewnuts (3 to 4 hours) - 10 to 11
Fresh grated coconut - half cup
Jaggery to taste
Powdered green cardamom- 1/2 tsp
Nuts and dried fruits as topping (optional)

Method:

In a pan, dry roast the grated carrots for 4 to 5 minutes.

Blend the soaked cashewnuts and fresh coconut in 1 cup of water. Add 1 more cup of water to bring it to a milk like consistency.

Add the nut milk to the carrots. Add jaggery.

Let it simmer on low heat till the desired consistency is reached. Keep stirring occasionally to prevent burning at the bottom.

Add powdered green cardamom for added flavour.

Garnish with chopped nuts and serve hot or chilled.

These guilt-free potato patties are comforting, flavourful and deliciously filling. Also, they are super easy to make.
I have loaded these patties with beetroots, carrots, capsicum, radish & basic spice. You can always get creative with the flavors or swap out ingredients with whatever you have on hand.
Boiled potatoes- 3 medium
Grated beetroot- 1 medium
Grated carrot- 1 medium
Grated radish- 1 small
Capsicum- 1 small
Green coriander- 1 large handful
Green chillies to taste
Spices to taste
Semolina(rawa)- 1 teaspoon
Squeeze out excess water from the grated vegetables.
Mash the potatoes and add in the vegetables and spices. Mix thoroughly to form a dough.
Add 1 tsp semolina to absorb excess water (This step is optional).
From the dough, make medium sized patties.
Lightly grease a griddle and cook the patties on both sides.
Serve with fresh green chutney.

About the ingredients:

Holy basil (Tulasi) helps clear out the skin of blemishes & acne. It is rich in antioxidants that help to prevent premature ageing.
Spinach is indeed good for your overall health. It is loaded with carotenes, amino acids, iron, iodine, potassium & magnesium, Vitamins A, C, K, E & B complex. Spinach particularly plays an important role in controling the appearance of wrinkles and dark circles.
Mint is full of anti-bacterial and anti-inflammatory properties that soothe your skin and help treat acne.
Coriander is rich in powerful antioxidants like vitamin C & E and fights against free radicals that damage the skin.

Did you know cauliflower leaves and stalks are one of the richest sources of calcium? They are packed with fiber and rich in Vitamin A, C and K as well.
Radishes too are packed with antioxidants and minerals such as, potassium and calcium. Radishes contain compounds and nutrients that have been proven to be helpful for conditions such as fungal infections, diabetes, high blood pressure, heart disease, digestive disorders, and certain types of cancers.
Recipe:
Saute onions and garlic in one teaspoon of oil, till they turn transluscent.
Add all the vegetables and saute for another 4 to 5 minutes on low to medium heat.
Add salt and pepper.
Add water as desired.
Cover and let it simmer till the cauliflower stems turn tender.
Serve hot.

Lentil cheelas (pancakes/crepes) made with overnight soaked mixed lentils and bottle gourd, which makes these cheelas very light and easy to digest.
Soak the lentils of your choice overnight or for 7 to 8 hours.
Drain the water and wash the lentils thoroughly.
Grind the lentils along with garlic and green chillies into a thick batter.
Grate the bottle gourd and squeeze out excess water. Chop some fresh green coriander. Mix into the lentil batter.
Add salt and other spices to taste.
Lightly grease a griddle and roll the batter into a thin pancake. Cover for a minute and then flip it over.
Enjoy with fresh green chutney.

If you are lacking in energy, this no cook breakfast with 3 key ingredients will help you supercharge your day while keeping your weight in check. What's more, it is also high in fiber, keeps cholesterol in check, improves hair and skin, prevents anaemia, boosts the mood, protects against cancer and arrests signs of ageing.

1. Mixed lentil sprouts (raw) - I used green mung/gram, urad/black gram and black chickpeas

2. Mixed overnight soaked nuts and seeds - I used almonds, walnuts, groundnuts, pumpkin seeds and sunflower seeds. ALWAYS discard the water and wash the nuts and seeds before consuming. Limit the quantity of nuts and seeds to 1 small cup (approximately 50gms) per person.

3. Overnight soaked raisins. Always wash the raisins before soaking them. DO NOT discard the water after soaking.
Just mix and enjoy. No additives needed
Caution: those suffering from diabetes should avoid raisins.
