VEGAN OPTIONS AT ARAKU, INDIRANAGAR

We just had a delicious, satisfying lunch at and the flavours were just 🥰

1. Grilled mushrooms on cashew yoghurt with onions, chillies and olive oil. It’s not on the menu but Chef Rahul made this upon request and it was definitely our favourite.

2. Chargrilled cabbage with a pil pil sauce- reminded me of the spanish tapas we had in Barcelona. Such simple flavours that really stand out.

3. Cassava Rosti with a pepper sauce and black rice. This isn’t vegan on the menu but Rahul was happy to customise it. A different take on potato hash browns. Definitely worth trying!

4. Spring onion with pistachio butter and spring onion pesto. This paired really well with the freshly made sourdough which I didn’t take a picture of but was moist and absolutely delectable.

5. Banana bread with caramelised banana, almond cream and banana peel chips. We ended the meal with this different take on the classic banana bread. The combination of all the flavours were insane in my opinion.

Chef Rahul has managed to create some amazing vegan dishes that don’t compromise on flavour at all. A great brunch spot with artisanal coffees and food that you definitely won’t find in any other restaurant/cafe in Bangalore.

Grateful that they have such diverse vegan options! Can’t wait to come back and try the other vegan dishes that they plan to add in the future.

It’s a wrap on 3 months of intensive culinary training at Plant Based Culinary Arts. So grateful for the time in london where I met some amazing people who all have the desire to create a more vegan friendly world! I’m also super proud of myself for getting out there and chasing my dream of becoming a vegan chef.

I hope to consult with restaurants and hotels that are looking to add a vegan menu- I’m tired of the days that restaurants accommodate us with a mere two to three options that you have no intention of going back for. The goal should be to attract vegan and conscious customers with enticing menus that make plant based eating mainstream.

1. Vegan croissant- buttery flaky and so delicious.
2. Avocado matcha ice cream sandwich with a chocolate almond glaze
3. Dark chocolate tarts
4. Tortellini with a basil spinach crème sauce
5. Tofu and mango mousse
6. Quinoa croquettes
7. Crispy tofu and aubergine wraps in a curry sauce
8. Butternut squash tortellini

Who knew I could actually bake bread!
You’d be surprised to know that I’m not someone who actually enjoys cooking. But oh I enjoy eating! I think about food all day long 😅

Naturally when I turned vegan, I couldn’t enjoy the same meat dishes that I was so used to and had no idea how to make plants taste flavourful. I quickly learnt that the plants are what makes the meat taste delicious and I could get all the same flavours I craved just by innovating and tweaking recipes.

So no I don’t enjoy cooking, but I get great pleasure out of successfully making a delicious vegan dish and savouring every bite. I also LOVE feeding people vegan food and seeing their reaction when they realise it’s actually vegan!

My time at Le Cordon Bleu has almost come to an end and as much as I’m dying to get back to the comforts of my home and my regular Indian food- I’m also so proud of how far I’ve come in the kitchen.
Sometimes pushing yourself out of your comfort zone can be so rewarding! ❤️

Going to a restaurant and having a great vegan meal is something I truly value. Food has always been a BIG part of my life - even before I turned vegan. When I’m not eating, I’m busy planning my next meal.

However when I turned vegan, one of the biggest fears was being able to enjoy good food. I thought I would never be able to enjoy great dinners with family and friends anymore. I started my vegan journey in 2016 and back then not many restaurants were offering vegan options. If I had dinner plans, I would most likely eat something hearty before going and order some fries, falafel or an accidentally vegan dish to snack on with drinks. Thankfully a lot has changed since then.

🌱The plant based movement is one of the fastest growing movements in the hospitality industry and rightly so! More and more people are choosing to eat this way for ethical, environmental or health reasons. This is probably the biggest culinary shift of our time!

⭐️ I’ve spent the last few months training to become a Vegan Hospitality Consultant at .hospitality . I’m so excited to be able to offer my services as a consultant to restaurants/hotels or any establishment that is looking to add plant based options, allergy friendly options to their menu.

⭐️My main aim is to help businesses become vegan friendly so that they can capitalise on this growing consumer trend. Some of the services I offer are menu evaluation, recipe development, kitchen training, staff training and menu launch events.

Oh you’re vegan?
What do you even eat? Grass?!

Definitely levelled up my breakfast game compared to my pre-vegan days of just eggs and toast. 😅

Breakfast 1: Pomegranate bowl, toasted seeded loaf with roasted red pepper hummus and a balsamic dressing salad.

Breakfast 2: mixed berry smoothie bowl. Mixed berries, kale, banana, apple, zucchini, flax seeds, dates and water. Topped with pumpkin seeds and pomo.

Breakfast 3: Seeded toast with cream cheese and a tofu bhurji.

Breakfast 4: Sesame bagel stuffed with tofu scramble, cream cheese and a corn salad.

Breakfast 4: Acai berry smoothie bowl.
