Chia Pudding!!😃

While the internet’s going gaga over ‘s recipe, the recipe has existed for a while now.
And although this is not a typical breakfast choice for most Indians it is worth adding it to your menu for all the health benefits it has to offer. :)

It is loaded with omega 3 fats, protein, fiber and various other micronutrients.

Steps: serves 2
•4 tsp chia seeds
•1 cup almond milk
•1/2 tsp honey
•1/4 tsp cinnamon

Mix well and refrigerate overnight. Add your fav toppings like fresh fruits or dried berries and even some granola & this makes for a wholesome breakfast🥣

Blackberry overnight oats!🫐🍒

Another vibrant coloured overnight oats recipe.

I made it vibrant by blending Greek yogurt with frozen blackberries and a little honey. Now, rolled oats/ granola in the smoothie and store it in fridge overnight. I served this with more frozen blackberries & blueberries, cherries too🍒 Some homemade granola and Greek yogurt!
You can go wild with the toppings and add more nuts and seeds but I used granola in my overnight oats and it has got all the nuts and seeds!

Blackberries are rich in Vit C good for immunity & skin health, Iron absorption too. They’re rich in fiber as well. Good source of manganese- it plays a key role in forming collagen & help prevent osteoporosis and good for blood sugar levels.

Mulberry overnight oats🍓🫐

A vibrant coloured overnight oats recipe.

I made it vibrant by blending the plantbased milk with mulberries, dates and chia seeds. Now, add instant or rolled oats in the milk and store it in fridge overnight or for 2-4 hours. Serve with fresh or dried mulberries and goji berries..

Mulberries are rich in Vit C good for immunity & skin health. Iron too which helps Vit C absorption and carries out oxygen through body. Potassium for blood pressure and Vit E for antioxidants.
Dried berries might have higher sugar content so include that in moderation in case you’re controlling sugar intake.

A good addition to your diet. Do try this in case you could get your hands on Mulberries!

Millet dosa w/ grated bottle gourd, Egg bhurji and cucumber

A basic meal that one can put together on a busy weekday he make it healthy.

Could you make out that there could be grated bottle gourd in the dosas? My friend gave me this millet dosa mix, it’s a saviour when busy. You can add spinach or grated zucchini or bottle gourd.

Let me know if you want the recipe for the dosa mix.

Egg bhurji is basic Indian style with onions, green chilli and eggs with basic seasoning. You can make it healthy by making it in olive oil or cold pressed oil.

Cucumbers are somewhere from Tamil Nadu which are soo tender with such tiny seeds.

Also, the idea is to give healthy option in Indian food.

This would be one of the great additions to your diet. I think smoothies/ soups or juice (with fiber) are a great way to include ingredients that you normally wouldn’t eat.

Here’s a classic combo of fruits apple + beetroot + carrot! You could throw in ginger and chia seeds or even pumpkin seeds to make it healthier.
The trick is to find ways to include more nutritious ingredients in things you eat! :)

This juice has so many benefits. It’s good for gut health as it has prebiotic properties. Rich in fiber, potassium and good for hypertension. Rich in Vitamin C and so aids immunity and eye health.

Overall a great drink to start your day with.

A simple delicious and nutritious lunch/ dinner you could put together.
Quinoa is nutrient dense- fiber rich, protein rich, vitamin and mineral rich (Vit B6, manganese, magnesium, potassium etc) This helps in overall metabolic health.
And so it is a good alternative for rice every once a while, to start with.

You could make this fried rice even more nutritious, by adding some scrambled eggs = more protein and healthy fats!

Quinoa can be cooked just like rice in a pot. 1:2 parts quinoa to water and make sure you wash it well before cooking.

Veggie loaded pasta🍝

I wouldn’t call this a very simple recipe because there’s a lot of cutting to do. But this sure can be made healthy by using whole grain pasta options and healthy oil like olive oil. And of course the vegetables make it healthy.

This plate has good carbs and vitamins and minerals from vegetables. And a one pot pasta recipe. Definitely a great addition to your list.

Mushroom Spinach oatmeal!🍄

Oatmeal need not necessarily be sweet or it’s sweet because how we cook or make it. So I thought I’d share some savoury options for people who do not like the sweet ones.🌶

This oatmeal was so creamy and yummy 🤤

Method:
Start with sautéing sliced mushrooms in butter or olive oil and some minced garlic. As the mushrooms are cooking add spinach, salt and some herbs - I added oregano.
Once the spinach has wilted add the rolled oats and 2 times water and some chilli flakes and let it cook. And you could serve it with egg too!

Oh and the good part is you can have it as a meal for lunch or dinner too!

Oats is one of the healthiest grains. They are fiber rich, and high in starch called resistant starch which is good for gut health, they have good protein. These make you feel full and good for weight loss.
They are rich in many vitamins and minerals and good for lowering cholesterol, blood sugar levels, good for heart health.

Spinach is one of the most nutrient dense vegetable- rich in fiber, Vit C, K and minerals like iron, calcium, etc. So basically it’s good for your skin, eye, bone, heart and diabetes.

Mushrooms are a natural source of Vit D which is needed for calcium absorption. Good for bones! And then it’s good for Vit B12 and is supposed to act as prebiotic.

Eggs are great source of protein, good fats and Vit D.

Mushroom sourdough toast🥖

A simple mushroom recipe with minimal spices like salt, chilli flakes oregano and then balsamic vinegar. Top this on a toast with a spread of cream cheese or any other spread you like. You can have this as sandwich as well. Will share recipe soon.
