Pan fried cod & mustard mash
With the most delicious garlic, thyme & mushroom sauce! Nom!
Kicking off the week with this gorgeous fish dish- so flavoursome and the fish was cooked perfectly... it just flaked apart & it was a dream!

Ingredients:
• 2 cod fillets
• 25g butter
• 4 sprigs fresh thyme
• 2 cloves garlic
• 200ml single cream
• 4 finely sliced chestnut mushrooms
• salt and pepper
Method
1. firstly pat your cod dry & lightly season
2. add butter, 1 clove minced garlic & thyme to a non-stick pan and bring the heat up to high
3. add in the cod fillets for around 2 mins on each side & baste each time
4. remove the cod from the pan and set aside
5. add the mushrooms and extra minced garlic clove into the pan and cook until the mushrooms have browned
6. add in the cream and season to taste - once you have got the heat right, add the fish back in to heat through & serve.
For my mustard mash I simply peeled and boiled Maris pipers, once soft I mashed with butter and milk before adding 2 tsp Dijon whole grain mustard, salt and pepper
