This post is about the favourite sweet of North India in the Shravan/ Saawan month. This month celebrates monsoon and has festivals like Teej where the ladies get together to play games and enjoy outdoors under the dark water laden clouds and cool breeze. Rakshbandhan or Rakhi the celebration of siblings has always had Ghewar as the centre of attraction.
Though Ghewar finds its routes in the Royal land of Rajasthan, its popularity has travelled across, Haryana, Delhi, Uttar Pradesh, Madhya Pradesh, Maharashtra and Gujarat. Traditionally this honeycomb circular discs of sweet is topped with rich dried fruits and dairy based Indian cream cheese.
In recent years, there has been a lot of innovation with this dessert that has seen toppings like fresh fruits, multiple international cheese and even edible flowers.
Imagine a red velvet Ghewar topped with mascarpone cream. Do tell us how does that sound in the comments. Who knows we end up making it together at the Gold Leaf Hospitality Training Kitchens.
