Creamy High-Protein Soya Salad
Ingredients
For the Soya:
1 cup boiled soya chunks
1 tsp olive oil
Salt to taste
1 tsp peri-peri masala
1 tsp schezwan sauce
For the Dressing:
1 tbsp thick Greek yogurt
1 tsp schezwan sauce
1 tbsp peanut butter
1 tsp olive oil
1 tsp lemon juice
1 clove garlic, chopped
A little water (to adjust consistency)
For the Salad Base:
Chopped lettuce or spinach
Cucumber slices
Cherry tomatoes (optional)
Instructions
1. Sauté the soya:
In a pan, heat olive oil. Add boiled soya chunks, sprinkle salt, peri-peri masala, and schezwan sauce.
Sauté until the soya turns slightly golden and crispy with a spicy kick.
2. Prepare the dressing:
In a bowl, add Greek yogurt, schezwan sauce, peanut butter, lemon juice, olive oil, and chopped garlic.
Whisk well until smooth. Add a little water to make the dressing creamy yet pourable.
3. Assemble the salad:
In a bowl, add your favorite veggies – lettuce, cucumber, and cherry tomatoes.
Top with the sautéed soya and drizzle the creamy dressing generously.
4. Toss and enjoy!
Mix gently and serve fresh. Perfect for lunch, dinner, or post-workout meals.
