A food truck is a large vehicle equipped to cook and sell food. Some, including ice cream trucks, sell frozen or prepackaged food; others have on-board kitchens and prepare food from scratch. Sandwiches, hamburgers, french fries, and other regional fast food fare is common. In recent years, associated with the pop-up restaurant phenomenon, food trucks offering gourmet cuisine and a variety of specialties and ethnic menus, have become particularly popular.Food trucks, along with portable food kiosks and food carts, are on the front line of the street food industry that serves an estimated 2.5 billion people every day. Food trucks service events (carnivals, construction sites, sporting events etc.) and places of regular work or study – college campuses, office complexes, industrial parks, auto repair shops, movie sets, farmers' markets, military bases, etc. – where regular meals or snacks are in high demand by potential customers. and Canadian cities including Toronto, Montreal, Hamilton, Vancouver, Washington, D.C., New York, Austin, Houston, Los Angeles, San Francisco, Seattle, St. Louis, Calgary, Portland and Tampa. Rocket Chef was started in October 2015. It offers stone-oven thin crust pizzas and gourmet sandwiches which are prepared inside a van by the startup’s chefs. Customers can place orders through geo-location-based app or via call and get food delivered to their doorstep. The app enables them to look up the food van closest to their vicinity.

Parsi Dhansak with Brown Rice

Ingredients:

½ kg mutton
11/2 cup tur dal preferably wet ½ an hour before cooking
2 small brinjals cut into 4 pieces each
Few mint leaves, coriander leaves and curry leaves
1 big tomato diced nicely
½ tsp haldi powder
1 tsp red chilli powder
11/2 tsp jeera powder
11/2 tsp dhansak masala powder
½ tsp garam masala
Salt to taste
1 or 2 green chillies slit into 2
1 tsp ginger garlic paste
1 tsp oil or ghee

Method:
Wash the dal and mutton . take oil or ghee in the cooker put curry leaves , mint leaves and Ginger garlic paste and slit green chillies last add nicely diced tomatoes and fry over sim for Few moments then add mutton and cook till the mutton is nicely coverd in the masalas and Then add all the dry masalas let the mutton roast for sometime now add the dal and 1 glass Full of water and put the cooker lid on. Cook for ½ an hour. Open and add finely chopped Coriander leaves.

Brown rice:

Ingredients:

2 cups rice
2 tbsp jaggery
2 onions nicely chopped into thin thin slices
2 pieces of cardamoms
2pcs cinnamon
1 bay leaf
3 or 4 whole peppers
2 pepper corns
1 piece star aniseed
¼ tsp jeera and salt to taste.
Ghee for frying

Method:
wash the rice and keep it aside. Fry onions in ghee till brown along with all the dry Masalas then put the jaggery and fry over low gas and put the washed rice add salt to taste and last add water. Cook till done.

Serves 4

You can also use the Same method of dhansak dal with chicken or vegetables for vegetarians.

Gongura Mutton

Ingredients
250 gm lamb meat
Turmeric powder to taste
Salt to taste
Ginger-garlic paste

For the curry:
2 Tbsp refined oil
6 cloves
3 cardamoms
1 stick of cinnamon
1/2 tsp cumin seeds
3 Tbsp chopped onions
1 tsp ginger garlic paste
100 gm gongura leaves
1 Tbsp red chilli powder
1 tsp coriander powder
1/2 tsp turmeric powder
10 curry leaves
6 slit green chillies
Chopped coriander leaves
50 ml water
1 1/2 tsp salt
Fried red chilli, curry leaves
Clarified butter

Method
Boil the meat with turmeric powder, salt and ginger garlic paste, keep aside.
Now heat oil in pan.
Add cloves, cardamoms, cumin seeds and chopped onions.
Saute onions till they turn translucent.
Then add ginger garlic paste, gongura leaves, red chilli powder, coriander powder, turmeric powder, curry leaves, slit green chillies, chopped coriander leaves, boiled meat, water and salt.
Mix well and cook for 5 minutes.
Garnish it with fried red chillies, curry leaves and clarified butter.

Serve hot with rice.
