This Fresh Green Chickpeas Salad is full of crunch, flavor, and all the good stuff your body needs to kickstart the new year on a healthy note. It’s super simple, light, and perfect as a quick snack or a side dish. Seasonal eating has never tasted this good!
Here’s the recipe:
Ingredients:
• 1 cup fresh green chickpeas (boiled and cooled)
• 1 cucumber, diced
• 1 tomato, chopped
• 1 small onion, finely chopped
• 1 green chili, finely chopped (optional, for that little kick)
• A handful of coriander or mint leaves, chopped
• 1 tsp roasted cumin powder
• Juice of 1 lemon
• 1 tbsp olive oil
• Salt and pepper to taste
Method:
1. Blanch the green chickpeas in boiling water for about 5 minutes, then rinse them under cold water to keep them crunchy.
2. In a big bowl, toss the chickpeas with cucumber, tomato, onion, chili, and fresh herbs.
3. Sprinkle some roasted cumin powder, season with salt and pepper, and drizzle olive oil and lemon juice.
4. Mix it all up, taste, and adjust seasoning if needed.
