Recipe
Kashmiri Dum Aloo:
Ingredients:
- 250g baby potatoes
- 2 tablespoons mustard oil or vegetable oil
- 1 teaspoon cumin seeds
- 1 teaspoon fennel seeds (aniseed)
- 2-3 green cardamoms
- 2-3 cloves
- 1 cinnamon stick
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1 teaspoon Kashmiri red chili powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- Salt, to taste
- 2 tablespoons plain yogurt
- 2 tablespoons chopped fresh cilantro (for garnish)
- Fresh mint leaves (for garnish)
Steps:
To Prepare the Potatoes:
1. Boil or steam the baby potatoes until tender. Peel and set aside.
To Make the Gravy:
1. Heat oil in a pan over medium heat. Add cumin seeds, fennel seeds(aniseed), cardamoms, cloves, and cinnamon stick. Let them sizzle.
2. Add ginger paste and garlic paste. Saute until fragrant.
3. Add Kashmiri red chili powder, cumin powder, coriander powder, and turmeric powder. Mix well.
4. Add the boiled potatoes and stir gently to coat with the spice mixture.
*To Finish the Dish:*
1. In a small bowl, whisk the yogurt and add it to the potato mixture. Stir gently.
2. Add salt to taste and mix well.
3. Garnish with chopped cilantro and fresh mint leaves.

- Adjust the amount of chili powder according to your desired level of spiciness.
- Serve with basmati rice or naan for a delicious meal.
