before I had children,
everything was a rush.
I couldn’t wait to grow up.
I couldn’t wait to finish college.
nothing ever seemed to go fast enough.
now, it’s the opposite.
now, it seems I need life to slow down.
I need more hours in the day,
a moment to freeze,
to be fully submerged
in this new love I have.

Breakfast Oatmeal Cake

It’s incredibly delicious and hearty. I want to emphasize that the coconut date almond butter is the star here so if you use something different I can’t guarantee the same results in taste.

I never measure anything I make unless I’m following a recipe so this was a challenge to get down. 😅

Ingredients:

- 2 bananas
- 1.5 cups oatmeal
- 1.5 tbsp chia seeds
- 1 cup almond milk
- 1/2 tsp vanilla extract (or 1/4 tsp vanilla powder)
- 1/4 tsp cinnamon (plus additional for garnish)
- 1/2 teaspoon salt
- Butter
- Coconut date almond butter, for topping (from Rapunzel)

Instructions:

1. Preheat your oven to 200°C (390°F). Grease an 8-inch baking pan with butter or coconut oil.
2. Mash the bananas in the prepared pan. Add the remaining ingredients and mix well.
3. Drizzle a small amount of cinnamon over the batter. Then, spread a generous layer of coconut date almond butter over the batter. I like to swirl it into the batter so it seeps in a bit.
4. Gently stick in a few tablespoons of butter into the batter. Spread the butter evenly around the batter.
5. Bake in the preheated oven for approximately 25-30 minutes.
6. Serve as is or add more butter while it’s hot. Add more of the almond butter (yes you are allowed), seeds for seed cycling or top with berries and yogurt of choice.

*The texture you want before baking is oatmeal on the thicker side but still easily stirrable.

To store:
Cover the pan or place in an airtight container and store in the fridge for up to five days.

You can heat up a serving every morning in the oven on 200°C by placing it on a baking sheet for about 5-10 min. Recommend adding more almond butter on top before heating so it caramelizes.

Should babies have cow’s milk once weaned?

For a long time, it has been believed that a baby should be offered cow’s milk to replace breastmilk once they have weaned of the b**b. However, no other liquid is as nourishing as breastmilk, so our job is not to replace breastmilk or formula with other liquids but rather offer them a variety of nutrient dense foods, being mindful to include certain nutrients they are no longer getting from breastmilk, like calcium, DHA, and probiotics.

There are few things to consider when it comes to milk:

• Pasteurized cow’s milk is hard for babies to digest. The process of pasteurization kills the enzyme (lactase), which helps with the digestion of lactose.

• It is one of the top allergenic foods and known to cause gastrointestinal discomfort, eczema, earaches, congestion, and runny nose.

It’s recommended to wait until baby is 12 months old before introducing cow’s milk. Other dairy products can however be introduced earlier or at 10+ months.

I recommend starting with plain organic kefir and yogurt. it’s fermented and rich in probiotics so easy on the digestion and you get the benefits of the good bacteria.

Even though yogurt is from cow’s milk it contains less lactose than milk. It also contains live bacteria that helps break down lactose.

For those who choose to offer cow’s milk quality is key so choosing whole, pasture-raised, grass-fed, organic or raw when possible.

Keeping in mind that too much milk consumption can cause iron deficiency in babies.
