SPINACH AND POTATO PANCAKES

Ingredients:

* 1 medium potato, washed, peeled, boiled and chopped

* 1 medium onion, washed, peeled and chopped

* 1 cup spinach, washed and chopped

* 3 tablespoons almond flour

* 2 eggs

* 1-2 tablespoons minced garlic

* Salt and pepper to taste

* Coconut oil for frying

METHOD:

1.- Peel and boil the potato until soft

2.- Remove potato from heat and allow to cool

3.- Wash, peel and chop onion

4.- Wash and chop spinach

5.- Peel and chop potato

6.- In a small bowl, mix all ingredients until well combined.

7.- Heat frying pan on medium heat, adding enough coconut oil to coat pan

8.- Measure out 1/4 cup of mixture for each pancake (mixture should make 6 small pancakes)

9.- Flatten into a small patty (3 should fit on the pan)

10.- Flip patties when slightly brown on one side (3-4 minutes)

11.- Eat warm or cold as lunch, dinner or a on the go snack! 😉

Creamy leek and celery Soup

Ingredients:
• Olive oil
• 4 stalks celery, sliced
• 2 leeks, sliced, white parts only (save green parts for garnish, if desired)
• 1 clove garlic, minced
• 1/2 teaspoon salt
• 1/2 tsp pepper
• 1/2 tsp dried thyme
• 12 ounces cauliflower florets (about 1 medium head)
• 4 cups chicken broth
• 1 cup light cream or 1 potato

Method:
1.- Spray the oil in a large saucepan over medium heat. Add the celery, leeks, garlic, salt, pepper and thyme. Cook until vegetables are softened, about 5 minutes.
2.- Add the cauliflower and broth and bring to a boil. Reduce heat and simmer until cauliflower is soft enough to be pierced with a fork, about 15 minutes.
3.- Transfer soup to a food processor or blender and blend until smooth (you may need to work in batches).
4.- Return to the saucepan and stir in the cream, if you are using a potato instead of the cream, you must add it at the beginning.
5.- Season with additional salt and pepper to taste.
6.- Garnish with green leek slices, if desired.
7.- Enjoy 😉

MUSHROOM CREAM SOUP

Ingredients:

* 1 Pound firm white mushrooms, cleaned.

* Juice from 1 medium lemon.

* 1 tbsp. Unsalted butter.

* 2 tbsp. minced shallots.

* 1/4 tsp. dried thyme.

* ½ Bay leaf.

* 1 tsp. salt.

* ½ tsp. freshly ground pepper.

* 2 Cup heavy cream.

* 1 ½ Cup chicken stock.

* 1 tsp. Corn-starch.

* 1 tbsp. Minced parsley.

METHOD

1.- Sprinkle the mushrooms with lemon juice. In a food processor, fitted with a metal blade, coarsely chop the mushrooms.

2.- Melt the butter in a heavy saucepan over medium heat, and lightly saute the shallots.

3.- Add the mushrooms, thyme, and bay leaf and sauté for 10 minutes, or until the liquid disappears.

4.- Add cream and stock and bring to a boil. Quickly reduce heat and simmer for 10 minutes.

🏡 Some people are still planning to stay home.... that’s okay - Be kind.
😯 Some are still scared of getting the virus and a second wave happening....that’s okay - Be kind.
💲🛒 Some are sighing with relief that they can go back to work knowing they may not lose their business or their homes....that’s okay - Be kind.
🙏 Some are thankful they can finally have a surgery, medical or dental treatment that had been postponed indefinitely...that’s okay - Be kind.
👩‍💻 Some will be able to attend interviews after weeks without a job....that’s okay - Be kind.
😷 Some will wear masks for weeks....that’s okay - Be kind.
💅🏃‍♀️ Some people will rush out to get their hair or nails, eyelashes, waxing or tattoos done....that’s okay - Be kind.
❤️ The point is we can have different opinions, feelings and fears and that’s okay - Be kind.
We each have a different story so
If you need to stay home, stay home - Be kind .
If you need to go out just respect others and keep your distance when in public - Be kind!
Don’t judge others because you are not in their story. We all are in different mental and emotional spaces than we were just a few short months ago and we are trying to adjust to our 'new reality' so remember - Be kind.

Be positive !!!!
Always remember that Positive thoughts brings positive vibes so positive outcomes.
Negative thoughts brings?? Yes brings negative outcomes.
You will receive what you are giving away, that’s the way that the Law of Attraction works.
I’m not telling you to don’t be real as unfortunately not everything is fine but just try to look for a solution to the problem instead of thinking and putting more negative thoughts in your mind that trust me, it won’t help you. Everything that happens to us, it’s happens for a reason, to teach us a lesson.
This chaos with the Coronavirus, really sad 😔 because it’s causing death (sorry but no more than a seasonal flu), but most importantly, it’s causing fear around the world, information has been manipulated, we don’t know what is real and what is not, we don’t know the exactly numbers of death for this virus 🦠, so the only thing that we could do is to stay at home and safe, following government’s recommendations. Meanwhile our economy is going down, bankrupt, unemployment, etc
You’ll think 🤔, how I can get anything positive from all this chaos?
Well, families are together, spending quality time with each other, doing activities together, going for walks, exercising. They don’t need expensive cars or clothes, they don’t need any material thing, they just need each other. We are going back to the basics, shopping for essentials, cooking at home with our family, spending time together. No more meetings or nights out or not having time to be at home. The Planet Earth 🌏 is recovering, less pollution, we are seeing that everywhere around the world 🌍
Stay calm, safe and to everyone I hardly recommend to meditate 🧘‍♂️, go for long walks (if it’s possible barefoot), connect with Mother Nature xx

[04/24/20]   I am going to share with you some vitamins and minerals benefits and where to naturally find them.
VITAMINS:

VITAMIN A.- Contains antioxidant activity; needed for healthy eyesight; helps synthesize sex hormones; protect the skin and respiratory tract; boots the immune system; required for bone growth and development.

Food: Eggs, liver, milk and other full fat dairy products.

VITAMIN B1.- Needed for carbohydrate, fat and protein metabolism; aids normal nerve function.

Food: Beans, eggs, fish, organ meats, peanuts, milk, whole grains, wholemeal bread.

VITAMIN B2.- Required for energy production; helps to maintain the integrity of mucous membranes, skin and eyes; aids normal nerve function.

Food: Eggs, leafy green vegetables, milk and other dairy products, nuts, organ meats, whole grains, wholemeal bread.

VITAMIN B3.- Required for energy production; aids normal nerve function; helps to maintain healthy cholesterol levels; promotes skin health; plays a role in the synthesis of hormones.

Food: Beans, fish, lentils, liver, nuts, poultry, whole grains.

VITAMIN B5.- Pantothenic acid.
Required for energy production; aids normal nerve function; involved in the body’s stress response; helps produce antibodies to fight infection.

Food: Eggs, fish, milk and other dairy products, poultry, meat.

VITAMIN D.- Aids calcium absorption, which is required for strong bones and teeth. There is also evidence suggesting that Vitamin D may play an important role in weight loss, both in adults and in children. Works in the small intestine, kidneys, helping absorb calcium.

Food: Butter, eggs, milk, oily fish, such as herring, mackerel, salmon, sardines, tuna, Vitamin D can also be made in the body in the skin from exposure to the sun.

MINERALS:

CALCIUM.- Builds and maintains strong bones; helps muscle contract; needed for healthy nerve function; aids blood clotting.

CHROMIUM.- Essential for blood sugar balance; controls appetite.
