If you or your kids love Mac and cheese, you have to try this dairy free recipe. It is absolutely delicious!!

Vegan Mac and cheese

INGREDIENTS
1. Whole wheat macaroni or shells
2. 1/4 cup raw cashews
3. 1 potato, diced
4. 1 carrot, diced
5. 1 shallot onion or 1/4 red onion
6. 1 garlic clove, peeled
7. Turmeric
8. Black pepper
9. 1 teaspoon salt
10. 2 tablespoons nutritional yeast
11. 1/2 cup unsweetened plant milk, I use soy
12. 1/4 cup water from cooked vegetables

PROCESS
1. Put cashews, potato, carrot, onion and garlic in a saucepan with water and bring to a boil
2. Remove from heat once potatoes are soft. If you can poke through with a fork then they are ready
3. Drain the water but leave 1/4 cup to use to make cheese sauce
4. Put the cooked cashews, garlic, onion, carrot and potato in a blender
5. Add nutritional yeast, salt, 4 dashes of turmeric, and 3 dashes of black pepper
6. Add the water that you saved. Add plant milk
7. Blend until smooth
8. Cook macaroni according to instructions
9. Drain
10. Add sauce and mix. Enjoy!!

This is the power of whole food plant-based nutrition!!

My patient went whole plant-based, no refined oils, eating to satisfaction and lost 30 lbs in 2 months!! His cholesterol plummeted too. He got off all of his blood pressure medications too.

Guess what? At this level of cholesterol, he is at heart attack proof levels. The level is total chol 150 and under and LDL under 70.

Which brown rice do you like? After many trials, I think Jasmine appeals to me the most!

INGREDIENTS
1. 2 cups Jasmine brown rice
2. 1/2 teaspoon salt
3. 3 cups water

PROCESS
1. Rinse the rice and put in a rice cooker and add water and salt
2. Cook with the brown rice mode
3. If cooking on the stove top, put the rinsed rice in a medium saucepan
4. Add 3 cups water and add salt
5. Cover and bring to a boil
6. Lower heat and cook covered until soft, about 45 minutes stirring once
7. Remove from heat and let it cool for 5 minutes. Fluff with a fork and serve

Pancake recipe
Ingredients
1. 1 cup whole wheat flour
2. ⁠1 tablespoon baking powder, aluminum free
3. ⁠1 teaspoon cinnamon powder
4. ⁠2 tablespoons pure maple syrup
5. ⁠1 cup unsweetened soy milk
6. ⁠1 teaspoon pure vanilla extract
PROCESS
1. Mix the flour, baking powder and cinnamon in a bowl
2. ⁠Add milk, maple syrup and vanilla and mix
3. ⁠Let it set for 5 minutes
4. ⁠Put a non-stick pan on medium to low heat. About 4 but may need to adjust depending on the pan
5. ⁠After 5 minutes, use a 1/4 cup and scoop the pancake mixture and pour on the pan
6. ⁠Cook on one side until you see bubbles and then flip on the other side. Cook until brown
7. ⁠Remove from heat and cook the rest of the mixture. Makes about 6 pancakes
8. ⁠Enjoy with fruit toppings, pure maple syrup or natural peanut or almond butter

This is how I got to love to eat steamed broccoli: I steam them for 3-5 minutes, then I add garlic salt. Then I add vegan Parmesan cheese(recipe below) and toss until well mixed.

Vegan Parmesan cheese
Ingredients
1. 1 cup raw cashews
2. 4 tablespoons nutritional yeast
3. 1 teaspoon garlic powder
4. 1 teaspoon salt

Process
1. Blend everything in the blender but not smooth
2. Store in the fridge in an air tight container and sprinkle on vegan Mac and cheese, scalloped potatoes, steamed broccoli or any other way you like.

Breakfast prep is done!

If you haven’t tried these blueberry whole grain muffins, you are missing out!! Kids love them too!

INGREDIENTS (I halved the ingredients to make only 9 muffins).
1. 2 ripe bananas
2. 6 tablespoons natural almond or peanut butter
3. 1/2 cup pure maple syrup
4. 1 cup unsweetened plant milk, I use soy
5. 2 teaspoons vanilla extract
6. 1 cup whole wheat flour
7. 1 cup rolled oats, ground to flour but not fine. Use seed grinder or a powered blender
8. 4 teaspoons aluminum free baking powder
9. 2 teaspoons fresh lemon juice
10. 1-2 cups blueberries
11. 2 pinches of salt

PROCESS
1. Preheat the oven at 350F. Line a muffin baking dish with paper liners. You will need about 18 cups
2. Mash the bananas in a large bowl
3. Add the butter, maple syrup, milk, and vanilla and whisk until the butter is broken down
4. In a separate medium bowl, mix the wheat flour, oat flour, baking powder and salt
5. Add the flour mixture to the liquid mixture and whisk until well mixed
6. Add the lemon and blueberries and whisk
7. Using a 1/4 cup, fill the muffin cups to 3/4
8. Bake for 30-35 minutes
9. Take out and cool for 15 minutes and enjoy!

No oil roasted potatoes

INGREDIENTS
1. 5 medium-large red potatoes, diced
2. 1 teaspoon each of garlic powder, onion powder, paprika and salt

PROCESS
1. Preheat the oven at 400F
2. Dice the potatoes and toss with the spices
3. Line a baking dish with parchment paper and pour the potatoes and spread to a single layer
4. Once the oven is at 400, roast the potatoes for 30 minutes and enjoy!

What will you eat those with? I have some leftover potatoes, chapati and rice to finish.

2-3 medium sweet potatoes

PROCESS
1. Preheat the oven to 400F
2. Wash the sweet potatoes and cut into wedges
3. Line a baking tray with parchment paper
4. Line the sweet potatoes single layer
5. Bake for 35-40 minutes, turning them halfway

Chia pudding for tomorrow breakfast!

INGREDIENTS
1. 1/4 cup chia seeds
2. 1 cup unsweetened soy milk or plant milk of choice
3. 1 tablespoon pure maple syrup
4. 1 teaspoon pure vanilla extract

PROCESS
1. Put all ingredients in a mason jar
2. Mix and set aside for 3 minutes
3. Break lumps with a spoon and mix well
4. Store in the fridge overnight
5. Enjoy next day with fruit and nut toppings
