If you or your kids love Mac and cheese, you have to try this dairy free recipe. It is absolutely delicious!!
Vegan Mac and cheese
INGREDIENTS
1. Whole wheat macaroni or shells
2. 1/4 cup raw cashews
3. 1 potato, diced
4. 1 carrot, diced
5. 1 shallot onion or 1/4 red onion
6. 1 garlic clove, peeled
7. Turmeric
8. Black pepper
9. 1 teaspoon salt
10. 2 tablespoons nutritional yeast
11. 1/2 cup unsweetened plant milk, I use soy
12. 1/4 cup water from cooked vegetables
PROCESS
1. Put cashews, potato, carrot, onion and garlic in a saucepan with water and bring to a boil
2. Remove from heat once potatoes are soft. If you can poke through with a fork then they are ready
3. Drain the water but leave 1/4 cup to use to make cheese sauce
4. Put the cooked cashews, garlic, onion, carrot and potato in a blender
5. Add nutritional yeast, salt, 4 dashes of turmeric, and 3 dashes of black pepper
6. Add the water that you saved. Add plant milk
7. Blend until smooth
8. Cook macaroni according to instructions
9. Drain
10. Add sauce and mix. Enjoy!!
