🌶️Next Level Avo Toast🌶️
Back in the kitchen with chef .arsanios and this time we made a 2 in 1 recipe! Confit egg yolk avocado toast with a homemade chili oil using of course!

🌶️HOMEMADE CHILI OIL
Ingredients
1 tbsp coriander seeds
1 tbsp cumin seeds
3 cardamom pods
1 cinnamon stick
1 star anise
2–3 cloves
15 g ginger, sliced and diced
3 spring onions, thinly sliced
6–7 garlic cloves, thinly sliced
1 red chili, sliced in half
3 tbsp chili flakes
4 tsp paprika
Salt, to taste
500 g EVOO
Instructions
Slice the ginger, spring onions, garlic using a mandolin.
Slice the red chili in half and cut ginger into small cubes.
Add the EVOO to a pan and warm it gently.
Add the onion and garlic first; fry until they turn lightly golden.
Place them on a paper towel and lightly season with salt.
Strain the oil in a glass container and gently clean the pan.
Add coriander seeds, cumin seeds, cardamom, cinnamon stick, star anise, and cloves to the oil. Toast until fragrant.
Add in the cubed ginger, chili flakes and sliced chili along with the oil.
Turn off the heat and add paprika to the warm oil.
Transfer to a bowl and let the oil cool slightly.
Add the fried garlic and onion back into the oil.
Season with salt and store in a clean jar.
🐣EGG YOLK CONFIT
Ingredients
2 egg yolks
Enough EVOO to fully cover the yolks
2 sprigs thyme
1 garlic clove
Instructions
Preheat your oven to 60–70°C
Place the egg yolks in a small oven-safe dish.
Add thyme and garlic. Cover completely with EVOO.
Bake for 30–35 minutes (closer to 45 minutes if using the lower temperature).
Let cool in the oil. Take the yolk out and season with salt.
Use gently — they should be silky, jammy, and rich.

Serves 1
Ingredients
1 sourdough slices, toasted
1/2 avocado
1 egg yolk confit
1 confit garlic
1 tbsp homemade chili oil
3 coriander leaves
1/4 lemon juiced
Salt to taste
