Homemade Mussel Pizza 🍕

A fresh and homemade dough that meets flavorful toppings for a delicious and satisfying meal.

Ingredients & Steps:
-For the dough:
🔸Mix 2 tsp dry yeast, 1/4 tsp sugar, and 1/2 cup warm water. Let it sit for 5 minutes.
🔸Sift 2 cups all-purpose flour and mix with 1/2 tsp salt.
Add the yeast mixture and 1/4 cup olive oil, then knead into a smooth dough.
🔸Shape into a ball, grease with olive oil, cover with a wet towel, and let it rest for 1 hour!
-Make the sauce:
🔸Sauté onions, peppers, tomatoes, mushrooms, and corn in 400g pizza sauce, with salt, pepper, and oregano.
-Prep the mussels:
🔸Soak mussels in lemon juice and vinegar, drain, and set aside.
🔸Roll the dough into your favorite pizza shape. Pre-bake for 5-10 mins at 180°C.
🔸Add the sauce, mussels, and shredded light mozzarella cheese.
🔸Bake at 180°C for 20 minutes (or until perfection) 😋

Hi, everyone! It’s been a while, and I’m so excited to reconnect with you all here. Life has been full of beautiful chaos lately, and I’d love to share a bit about what’s been happening.

I’m Lami, a licensed dietitian based in Sweden, but first and foremost, I’m a mom to two little rays of sunshine ☀️. My eldest daughter is 2.5 years old and keeps me on my toes with her endless curiosity. And just 2.5 months ago, we welcomed her baby sister into the world—a tiny bundle of love who’s teaching me all about slowing down and savoring the moment 👧🏻💖.

Balancing motherhood with my passion for nutrition has been an adventure, but it’s also given me a fresh perspective on health and well-being. It’s not about perfection—it’s about finding what works for you, being kind to yourself, and enjoying the journey!

Eggless Waffle Recipe 🧇

This recipe makes 10 waffles 👌🏼

Ingredients:
🔺2 cups all-purpose flour
🔺3 tablespoons sugar
🔺2 heaped teaspoons baking powder
🔺1/2 teaspoon salt
🔺3 teaspoons cardamom
🔺1/3 cup oil (i.e rapeseed)
🔺2 cups skimmed milk
🔺1/2 teaspoon vanilla extract (optional)

Method of preparation:
-Preheat the Waffle machine.
-In a bowl, add the dry ingredients (flour, salt, baking powder, cardamom, and sugar) and mix.
-Add the wet ingredients to the dry ones and whisk.
-Pour around 1/3 cup of your batter in the waffle maker.
-Remove your waffles when notified.
-Serve with fruits or ice cream scoop 😉

المكونات:
🔺٢ كوب دقيق لجميع الأغراض
🔺٣ ملاعق طعام سكر
🔺٢ ملاعق صغيرة من بيكنغ باودر
🔺نصف ملعقة صغيرة ملح
🔺٣ ملاعق صغيرة #هيل
🔺٢ كوب حليب
🔺ثلث كوب زيت (مثل بذور اللفت)
🔺نصف ملعقة #فانيليا (اختياري)
طريقة التحضير :
‏-سخني ماكينة الوافل.
- في وعاء، ضع المكونات الجافة (الدقيق، الملح، البيكنج باودر، الهيل، والسكر) واخلط.
‏-أضيف المكونات الرطبة إلى الجافة واخفق.
‏-اسكب حوالي ثلث كوب من الخليط في ماكينة صنع الوافل.
- قم بإزالة الفطائر الخاصة بك.
‏-تقدم مع الفواكه أو الآيس كريم😋
