Oh hello you big bowl of deliciousness 😍❤️Loaded cauli mash for dinner loaded with bacon and cheese 🥓🧀 This recipe is for 8 because I loooooove leftovers of this, but you can 1/2 it if you want! ⁠

• 2 heads cauliflower, cut into large pieces (I used 2 bags of Trader Joe's pre-cut cauliflower because I love a short cut;)⁠
• 2 cloves of garlic, minced⁠
• 6 tablespoons of butter⁠
• Pink salt and pepper to taste⁠
• 2 tablespoons of Sour Cream⁠
• 1 tablespoons of Heavy Cream⁠
• 1 pack of bacon, crumbled ⁠
• Shredded cheese, colby jack / mexican / gruyere whatever you like⁠
• Green Onions, finely chopped⁠
⠀⠀⠀⠀⠀⠀⠀⠀⠀⁠
⠀⠀⠀⠀⠀⠀⠀⠀⠀⁠
DIRECTIONS⁠
1. Boil a large pot of water, then place cauliflower pieces into boiling water. Reduce to a simmer and let cook for 8-10 minutes.⁠
2. Drain water from cauliflower, place on plate with paper towels to dry it.⁠
3. Add cauliflower to food processor with minced garlic, butter, s&p, sour cream, and heavy cream.⁠
4. Process for 1-2 minutes, scraping the sides of the bowl every once and awhile.⁠
5. Top with bacon crumbles, green onions and cheese. Serve mashed cauliflower while still warm!⁠

Introducing the amazing :

First pic is a 15 lbs difference over 2 months. Second is a year difference. I got SUPER serious about finishing what i started with keto and the weight started coming off again! Still haven’t made my bed though.. 🤣🤷🏻‍♀️ Pay attention to your macros.

Today's Recipe: 20 Minute Baked Shrimp with Garlic Butter Sauce⁣⁠
(Seriously, one of the BEST Keto shrimp dishes ever!)⁣⁠

Ingredients:⁣⁠
1 1/4 lbs extra large shrimp, peeled and deveined⁣⁠
1/4 cup butter⁣⁠
1 Tbsp minced garlic (3 cloves)⁣⁠
2 Tbsp fresh lemon juice⁣⁠
Salt and pepper⁣⁠
1/8 tsp Red pepper flakes, or to taste (optional)⁣⁠
2 Tbsp minced fresh parsley⁣⁠
⁣⁠
Instructions:⁣⁠
- Preheat oven to 350 degrees. Place shrimp in baking dish.⁣⁠
- Melt butter in a small saucepan over low heat. Add garlic and saute 30 seconds. Alternately melt butter with garlic in a small microwave safe dish in microwave. Stir lemon into butter mixture.⁣⁠
- Pour butter mixture over shrimp in baking dish, season with salt and pepper and red pepper flakes, toss shrimp then spread into an even layer.⁣⁠
- Bake in preheated oven until shrimp are cooked through (pink and opaque) about 9 - 13 minutes. Sprinkle with parsley and serve warm, spooning sauce over shrimp.⁣⁠

These pics were taken about 2 years apart in the same hotel. I had already lost two stone on the left for my graduation and I was so proud. But I did still feel really uncomfortable. I am not going to say I looked horrible on the left, because I don’t and I know that my ‘before’ might be someone’s ‘now’. I just want to say that anything is possible if you put your mind to it! If I can do it, anyone can. Just take every day as it comes and set little goals to smash! 🌈💗

✖️I only dreamt of wearing something so fitted. I worked to make my dream a reality, it was hard but so dam worth it.
✖️You can & will do this. Wake up and think positive thoughts. You Can achieve absolutely anything you want, no dream is too big.
✖️It’s more than a diet it’s a lifestyle change, it’s creating new habits and remaining consistent with them, there is not a quick fix.
✖️Take measurements you might not be losing lb’s every week but you’ll be losing inches.
✖️ Don’t compare your losses to others. Everybody losses lb’s at different rates. I personally never lost more than 2 lbs a week and managed 6 stone in 11 months that way! It will happen, hang on in there.

Picture on the left: I would cover myself up. I was sad, hurt and struggling through tons of emotional pain. I don’t knock the girl on the left. The struggles and pain I endured brought me to where I am now. I climbed that freaking mountain 🏔
I pulled myself out of the pits. It wasn’t just my own will and want. Through all that I struggled with God! We wrestled on the floor and I brought all the s**t in my life out! Going through that experience has brought me so much more peace than I ever thought I could have. My journey is not over. They’ll always be demons that I’ll continually have to give over to God. 🍭

My encouragement to you if you want it is to GET ON THE FLOOR AND WRESTLE! WORK THROUGH YOUR S**T! DON’T GIVE UP! .

Spaghetti squash alfredooo 🌱🍝🥰 Not to be dramatic, but this might be the best thing I’ve made all year. It’s the kind of comfort food that calls for cuddles on the couch (my move last night), satisfies carby noodle cravings, aaand packs several servings of veggies. That’s what we call a win-win-win din 👏🏻.⁠

SPAGHETTI SQUASH ALFREDO⁠⁠
✔✔ 𝙄𝙉𝙂𝙍𝙀𝘿𝙄𝙀𝙉𝙏:
1 spaghetti squash, roasted⁠
1/2 cup plain cream cheese (can sub any plain cream cheese)⁠
1/4 cup parmesan cheese⁠
1/2 cup unsweetened almond milk, warmed in the microwave 1 minute⁠
1/2 teaspoon garlic powder⁠
1/4 teaspoon white pepper (or regular pepper)⁠
salt, to taste⁠
Chopped parsley (garnish)⁠
2 (4-6 oz) chicken breasts⁠
Seasonings if choice (I used garlic powder, dried basil, and dried oregano)⁠
1-2 teaspoons avocado oil or garlic ghee⁠
🔼🔼INSTRUCTIONS:
1). Remove “noodle” strands from spaghetti squash; place half in a large bowl and save the rest for later .
2) In a blender combine all remaining ingredients, except parsley. Blend until smooth. Toss with hot spaghetti squash and garnish with parsley. Serve with pan-seared chicken breast (optional).⁠ ⁠⁠⁠⁠
