🌱 Vegan Buddha Bowl with Tahini Dressing

Ingredients:

For the bowl:

1 cup cooked quinoa

1 cup roasted chickpeas (seasoned with paprika, salt, and olive oil)

1/2 avocado, sliced

1/2 cup cherry tomatoes, halved

1/2 cup cucumber, sliced

1/2 cup shredded carrots

1/2 cup shredded red cabbage

Fresh parsley or cilantro for garnish (optional)

For the tahini dressing:

2 tbsp tahini

1 tbsp lemon juice

1 tbsp maple syrup

1 garlic clove, minced

2–3 tbsp water (to thin)

Salt to taste

Instructions:

1. Roast the chickpeas: Preheat oven to 400°F (200°C). Toss chickpeas with olive oil, paprika, and salt. Roast for 25–30 minutes until crispy.

2. Cook the quinoa: Rinse and cook according to package instructions. Let it cool slightly.

3. Make the dressing: Whisk all ingredients together in a small bowl. Add water until it reaches your desired consistency.

4. Assemble the bowl: Start with a base of quinoa. Arrange chickpeas, avocado, tomatoes, cucumber, carrots, and cabbage in sections around the bowl.

5. Drizzle with tahini dressing and sprinkle with fresh herbs if desired.

🥣 Peanut Butter Banana Quinoa Bowl Recipe (Vegan + Plant-Based)
Ingredients:
1 cup cooked quinoa (white or tri-color)

1 ripe banana, sliced

2 tbsp natural peanut butter

1 tbsp maple syrup (optional, for sweetness)

1 tbsp sliced almonds

1 tbsp vegan chocolate chips (optional)

1/4 tsp cinnamon (optional)

A pinch of sea salt

Instructions:
Cook the Quinoa:
If not already cooked, rinse 1/2 cup dry quinoa and cook it in 1 cup of water. Bring to a boil, reduce heat, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork and let it cool slightly.

Assemble the Bowl:
In a bowl, add 1 cup of cooked quinoa as the base.

Add Toppings:

Swirl or dollop the peanut butter onto the quinoa.

Arrange banana slices neatly.

Sprinkle sliced almonds and chocolate chips.

Drizzle maple syrup (if using).

Dust with cinnamon and a tiny pinch of sea salt.

Serve & Enjoy:
Eat warm or chilled. Perfect for breakfast or a post-workout snack.
