Cena 3.22.22- typical veg spontaneity
Bowl of rice made with a little coconut oil and a splash of ACV at the end of cooking, just before serving. Toss rice with a fork first.
Roasted romanesco in the oven high temp with a little olive oil and sea salt. We like the crispy s**t. Since I don’t eat potato chips or bags of snacks from the vending machine anymore (no need for the days of guilty pleasure during long stressful shifts in the hospital) roasted veggies really satsify.
Cooked garbanzos from the other day…only make from dried beans now. I don’t use canned s**t either. Only sometimes if it’s coconut milk but since it’s hard to find here in BCS, I taught myself to make my own from shredded organic coconut. It’s actually good for drinking and all things creamy sauces.
Heated the beans up in a sauce pan with a bunch of dried herbs and turmeric and a little water.
Then added some sautéed green onions and garlic in butter and olive oil. Tossed it in with the beans with some lime juice at the end.
Add sliced avo and some chopped fresh herbs on top to serve. I used parsley and mint.
Add a little soy sauce to give yourself an Asian Buddha experience.
