It seems everyone has been baking more these days. We must be seeking the smells and coziness that baked goods bring. When my bananas were turning, it was time for banana bread. Luckily, recently posted his famous Blanana Bwed recipe. As Tiny Chef is the most famous vegan, tiny chef, I had to give it a shot. It was delicious! I subbed one cup of whole wheat flour for white which is my trick when I want to delude myself into thinking something sugary is healthy for me 😄. The best part about banana bread is, in this work from home life some of us are now in, you can get it started before your workday and take a break for a slice to get through the morning. I've been watching all the new home cooks and, I have to say, I'm impressed! Folks are really rising to the occasion as far as meal prep goes and it's inspiring to see the creativity - especially when many people find themselves busier than usual working remotely, parenting, keeping calm, AND cooking. For my part, I've been glad that I always keep a packed pantry of canned beans, grains, pasta, canned tomatoes, etc. Also a freezer of frozen greens, broccoli, fruit, and veggie burgers. Grocery deliveries by friends and stores have helped during my quarantine but I wouldn't have starved with my baseline stash. 🤔 What lessons have you all learned from this homebound time? 🤔 Share your tips, tricks, and lessons, please! And I hope everyone takes good care during this time 💕

Lazy bowls for lazy vegans. Quick pickle some cucumbers, add some kimchi, reach for the sriracha (because you ran out of gochujang) and toss it together with some baked tofu and quinoa. Perfect, nutritious, flavorful. 😊

These colorful tacos were all incredible but the real discovery was the coconut cottage cheese. I didn't know I missed cottage cheese until tasting it! Truly amazing. Mexico City is THE place to visit for vegans. Let's all just move here. 🇲🇽

Mexican food is the best and VEGAN Mexican? Forget about it. Amazing! I remember when vegetarian was understood to mean you only eat pollo 🐔. 2019 is a great year to be vegan. Mexico City is bringing it in a big way. These enchiladas with almond cream 😍... ❤ our 🇮🇹 neighbors down south!

Autumn is for soup. This is an incredibly simple red lentil soup recipe a friend recommended with... apricots! Wild, right? Lil bit of sweetness is great in meals. I just added some kale after immersion blending it a bit because, you know, 💪. This is a great busy week day night recipe because it has so few ingredients but is still really really good. Easily found on ! 🍂
