These rankings commonly come from the ORAC (oxygen radical absorbance capacity) test, which measures how well a substance neutralizes free radicals in a controlled lab environment. Cloves score exceptionally high in these experiments compared with many fruits and vegetables.

However, scientists emphasize that ORAC values do not necessarily reflect how antioxidants behave inside the human body. Because of this limitation, the USDA removed its ORAC database, noting that antioxidant absorption, metabolism, and real biological impact are far more complex.
