HYDROGENATED FATS

The process by which UNSATURATED FATS are converted into SATURATED FATS by the addition of hydrogen at double bonds is called HYDROGENATION
AT the same time it results in formation of Trans Fatty acids.

Vanaspati ghee and margarine are two such fats.

BENEFITS OF HYDROGENATED FATS

HYDROGENATION improves the appearance, shelf life and palatability of oils since they are not so easily oxidized as unsaturated fats.
HYDROGENATED FATS are used in making commercially processed foods like BISCUITS AND CAKES

HARMFUL EFFECTS OF HYDROGENATED FATS

Trans Fatty acids raise LDL cholesterol
Decrease HDL cholesterol
Increase the tendency of abnormal blood clotting.

Thus even though HYDROGENATED FATS are devoid of any direct cholesterol in it, they are more detrimental for health compared to saturated fats obtained directly from animal sources.

1. SATURATED FATS: contain saturated fatty acids. These fatty acids contain only single bonds in their carbon atoms and therefore have maximum number of hydrogen atoms that each carbon atom can carry.

That's why they are called SATURATED FATTY ACIDS.

SATURATED FATS are in solid state at room temperature as they have higher melting point.

Example,
All animal fats except fish 🐠🐟 are predominantly saturated fats, butter, ghee, cheese, milk 🥛 eggs, meat.etc

HARMFUL EFFECTS OF SATURATED FATS

1. They increase blood cholesterol because
A. They themselves contain cholesterol
B. They stimulate the liver to produce more cholesterol
C. They inhibit the uptake of LDL cholesterol by cells. Ie. Cells can't take in cholesterol easily that is circulating in the blood.

2. Excess consumption will lead to increased levels of triglycerides in blood and increased triglycerides storage in adipose tissue.
This lead to increase in body weight and problems connected with obesity.

Also excess blood triglycerides increase CHD risk also.

BENEFITS OF SATURATED FATS

1. Foods cooked in saturated fats have a long shelf life because saturated fats are more stable and more resistant to oxidation
2. They have a good smell and taste

3. They provide fat soluble vitamins. Eg vitamin E present in them functions as an antioxidant and delays the development of rancidity.

4. Saturated fats provide cholesterol. Some minimum amount of cholesterol is required by the body for its needs. Only excess is harmful.✅✅

1. Fat serves in the body as an efficient source of energy and for this purpose it is deposited in various fat depot's ( called ADIPOSE TISSUES) within the body and under the skin.
2. Fats provide twice as much energy as that provided by the same amount of carbohydrates.

3. Fats provide fat soluble vitamins (A, D , E, K) and are necessary for their absorption.

4. Combination of. Fat and protein ( LIPOPROTEINS) are important cellular constituents, occurring both in the cell membrane and in the mitochondria within the cytoplasm also serves as means of transporting lipids in the blood.

5. Fats give taste and flavor to the diet.

6. Fats supply essential fatty acids to our body. Most of these fatty acids needed by our body can be prepared from carbohydrates present in our body. But some can't be synthesized by our body cells and must be supplied through the diet.
These are called ESSENTIAL FATTY ACIDS.
A. Linoleic acid
B. Alpha - linoleic acid

Essential fatty acids are unsaturated fatty acids and are present in almost all plant foods and vegetables oils (except coconut oil).

WHAT IS FAT

Dietary fats and oil are combination of glycerol with fatty acids.
One molecule of fat consists of 3 molecules of a fatty acid and one molecule of glycerol. That's why it is called TRIGLYCERIDES.

The storage fats of both plants and animals are triglycerides.
Fats are made up of 3 elements namely
Carbon, hydrogen and oxygen, of which the carbohydrates are made.
The difference is that fats contain less proportion of oxygen as compared to carbohydrates.. During the process of digestion, fat is broken down into fatty acids and glycerol.

Fats are members of a heterogenous group of organic compounds known as LIPIDS.

The term lipid also includes in addition to fat (or triglycerides), the cholesterol, cholesteryl ester's and phospholipids. ✅✅

How to reduce LDL ( harmful) cholesterol.
1. Reduce intake of to***co
2. Avoid sedentary life and do regular exercises.
3. Take measures to cure high blood pressure and diabetes if you have any of these diseases since they tend to increase cholesterol in the blood
4. Reduce mental stress. Stress has been found to increase LDL cholesterol
5. Reduce intake of tea, coffee, soft drinks, chocolate 🍫 etc The caffeine in these products stimulates excess cholesterol production in the body.
6. Reduce intake of dietary cholesterol. Foods having high cholesterol should be avoided
7. Increase intake of foods containing soluble fiber eg. Apple, banana 🍌, carrots, potato etc.
Soluble fiber binds with dietary cholesterol and is excreted out of the body along with undigested food.
8. Certain foods have been found to reduce LDL cholesterol, for example,
Onion, garlic 🧄, soybeans etc. it is observed that daily intake of 3-4 cloves of fresh garlic and Amla ( in any form -- juice or raw or pickle ) have substantial cholesterol lowering effect.

WAYS TO INCREASE HDL( Good Cholesterol) part 3.
1. Do regular exercise: Exercise increases HDL cholesterol.
2. Reduce total fat intake. There is a reciprocal relationship between blood levels of triglycerides levels and HDL cholesterol.

Hence people with high blood triglycerides tend to have low HDL.
3. Reduce intake of trans fatty acids eg Margarine etc.
They reduce HDL cholesterol.

3. Certain foods have been found to improve H cholesterol eg. Onion, soyabean, garlic 🧄, soluble fiber eg pectin found in apple, Banana, oat bran,
