🥛Tigernut pap recipe

🥛 Maize (either yellow/white)🥛Millet
🥛Coconut.
🥛 Dates
🥛Tigernut
🥛Groundnut (optional)
🥛Ginger
🥛Tumeric
🥛Cloves

🥛 In a clean bowl, sieve your maize and millet to remove stones
🥛Soak corn and millet for 2 to 3 days with a clean water
🥛make sure to wash it and remove the water and rinse with a clean water before blending
🥛 Add all other remaining ingredients
🥛 blend with your blender or take it to commercial blenders, tell them to blend it very smoothly so that you won't need to sieve it again.
🥛Pour clean water on it, and remove daily until it finishes
NB. The process of making Is the same way you make pap for drinking. Boil water and make it .

Bread Making at home
Recipe;
🥪 550g (3½ cups) flour
🥪 3½ TSP active dry yeast
🥪 1½ TSP salt
🥪 4Tbsp Veg. Oil
🥪 70g (⅓ cup) sugar
🥪 150ml milk/ ⅓ cup dry milk
🥪 80ml water
🥪 Flavour of your choice ( optional) 1½ TSP
🥪 Nutmeg (optional)

Procedure;
🥪 In a large bowl, combine all dry ingredients ( flour, salt, nutmeg, sugar, milk ( if you are using powdered milk)
🥪 Heat your water to become warm (must not be too cold or hot, you can test with the tip of your finger)
🥪 In another bowl, mix the lukewarm water with 1tsp sugar and yeast, let it sit for 5-10 mint. Until it become frothy
🥪 Make a hollow in the centre of the mixed flour, add the yeast mixture, veg. Oil& milk ( if using liquid milk) flavour, mix all together to form a dough
🥪 Turn the dough into a floured flat surface to knead for about 10 mint. Until smooth and elastic
🥪 Place the dough in a greased bowl, cover with a clean napkin and place in a warm place ( inside cupboard or unheated oven) for about 1½ -2 hours or until it doubled in size
🥪 Place on the flat surface again, punch down the dough & knead again for about 5 mint.
🥪 Cut it into a shape of your choice or into sizes of your choice, put them in a greased loaf pan
🥪 Cover with napkin the second time for another an hour to double in size
🥪 Place in a preheated oven and bake for 25 mint. Or until the top is golden brown
🥪 N:B. Make sure you use active yeast
🥪 If you do not have loaf pan, make use of baking pan or pot🥪 The sizes of your dough, must not be bigger than pan,
🥪 You can add coconut flakes or dry fruits to spice it up.

Buns making

🧆 Flour 400g
🧆 baking powder 1 Tbsp
🧆Butter 85ml
🧆Egg 3
🧆 sugar 100g
🧆Milk 195ml (optional)
🧆Pinch of salt
🧆vanilla essence 1 tsp
🧆vegetable oil for frying

METHOD

🧆 In a bowl mix butter, flour, sugar, salt & baking powder, if using dry vanilla essence, add it.
🧆Add eggs & milk, liquid vanilla essence
🧆gently mix and fold all together with clean hand
🧆 The batter should not be watery or too hard.
🧆wash off all the batter from your hands as you prepare to fry.
🧆In a bowl pour in warm water and some oil, because sticky hands are difficult to work when handling dough.
🧆place a pot with vegetable oil on fire
🧆Make balls with your mix& drop in hot oil and fry for a few minutes
🧆Fry a few at a time till they are a light golden brown. Use medium heat so it can cook through to the core without burning on the outside.

N.B people makes mistake of cooking with high heat and end up with cooked outside and undone inside buns!!!

"Mayonnaise making"

Recipe;
1 cup of vegetable oil
1 lemon or lime
½ Tbs vinegar
Pinch of salt
1 Tsp sugar
2 eggs

Procedure;
🥪break and pour your eggs into a blender or container
🥪cut the lime or lemon into 2 and squeeze out the juice, add to the egg
🥪add your vinegar, salt and sugar and blend together
🥪 gradually add your vegetable oil and continue blending
🥪blend until you have a thick to your taste
🥪store in a tight container with lid
🥪 It's ready to use

*Tumeric Milk*
Ingredients:
🫚1 pcs tumeric root/1 tsp Tumeric Powder.
🫚150mls /I glass Milk of your choice

Procedure:
🫚Wash & grate your tumeric with grater or cut into tiny pieces, if using fresh one.
🫚In a clean pot, Boil Tumeric and Milk for 15 minutes.
🫚Strain the mixture with sieve
🫚let it cool and drink.
