Last Night’s Delicacy Class Was Super Delicious!
On the menu: A true Yoruba classic!
- Egbo ati Ewa (Corn Porridge & Beans)
Served with fried fish and kponmo for that extra deliciousness!
Ingredients You Need:
âś” For Egbo (Corn Porridge): White corn (grated & cleaned), Salt
âś” For Beans: Beans (any variety), Onions, Salt
âś” For Stew: Scotch bonnet pepper (ata rodo), Bell pepper, Fried fish, Kponmo, Onion, Palm oil, Seasoning, Salt
How to Prepare Egbo
👉 At the market, ask for maize for egbo, or get white maize, take it to the mill, and tell them you need it for egbo—they will prepare it for you.
👉 Best cooked over firewood or charcoal, as it takes time.
👉 Cook until it is very soft (Ko ro petepete). Add salt to taste or enjoy it saltless, as some prefer.
How to Prepare Beans
👉 Wash your beans, parboil for a few minutes, then drain.
👉 In fresh boiling water, add the parboiled beans, salt, and onion and cook until very soft.
For the Stew
👉 Heat palm oil, add sliced onions and let it fry slightly.
👉 Add kponmo, salt, and seasoning, stir well.
👉 Add blended/grated pepper, stir, cover, and allow to cook for 7 minutes.
👉 Gently add fried fish and stir lightly, so the fish stays intact. Let it fry for 3-4 minutes. Stew is ready!
How to Serve It
🍛 In a plate, serve egbo on one side, beans on the other, and pour the rich, flavorful stew with enough oil on top!
