Akara is a popular Nigerian breakfast dish made from mashed beans. Here's a step-by-step recipe to make delicious akara:

Ingredients
- 1 cup dried beans (such as brown or black-eyed peas)
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- Vegetable oil for frying

Instructions
*Preparing the Beans*
1. Rinse the dried beans and soak them in water for at least 8 hours or overnight.
2. Drain and rinse the soaked beans.
3. Remove the skins from the beans by rubbing them between your hands or using a blender to pulse them a few times.

*Mashing the Beans*
1. Place the skinned beans in a blender or food processor.
2. Add the chopped onion, minced garlic, salt, black pepper, and cayenne pepper (if using) to the blender.
3. Blend the mixture until it's smooth and free of lumps.
4. Taste and adjust the seasoning as needed.

*Forming the Akara*
1. Heat a non-stick pan or a deep frying pan with at least 2-3 inches of vegetable oil over medium heat.
2. Using a spoon, scoop the bean mixture into the hot oil, making sure not to overcrowd the pan.
3. Use the spoon to shape the akara into small balls or patties.
4. Fry the akara for 3-4 minutes on each side, or until they're golden brown and crispy.
