In an effort to explain a modern medical mystery, an international team of researchers led by the University of California San Diego has identified a potential microbial culprit behind the alarming rise in early-onset colorectal cancer: a bacterial toxin called colibactin.

Produced by certain strains of Escherichia coli that reside in the colon and re**um, colibactin is a toxin capable of altering DNA. Now, scientists report that exposure to colibactin in early childhood imprints a distinct genetic signature on the DNA of colon cellsβ€”one that may increase the risk of developing colorectal cancer before the age of 50.

According to WHO, "Food additives are substances primarily added to processed foods, or other foods produced on an industrial scale, for technical purposes, e.g. to improve safety, increase the amount of time a food can be stored, or modify sensory properties of food.

Food additives are substances not normally consumed as a food by themselves and not normally used as typical ingredients in foods. Most minimally processed and unprocessed foods do not contain food additives.

Food additives are assessed for potential harmful effects on human health before they are approved for use".

Going through the link of the FDA approved food additives, it is still very important that these food additives be consumed minimally for a better health.

The bacteria and viruses that cause the most illnesses, hospitalizations, or deaths includes:

β€’Campylobacter.

β€’Clostridium perfringens.

β€’E. coli.β€’Listeria.

β€’Norovirus.

β€’Salmonella.

Salmonella infection is usually caused by eating raw or undercooked meat, poultry, and eggs or egg products or by drinking unpasteurized milk.

The incubation period β€” the time between exposure and illness β€” can be 6 hours to 6 days. Often, people who have salmonella infection think they have the stomach flu.

Secondly, Listeria infection is a foodborne bacterial illness that can be very serious for pregnant women, people older than 65 and people with weakened immune systems. It's most commonly caused by eating improperly processed deli meats and unpasteurized milk products.

β€’ Listeriosis is an infection caused by Listeria monocytogenes.

β€’ Only immunosuppressed individuals and pregnant people are at risk of a serious case of listeriosis.

β€’ Listeriosis can lead to septicemia or meningitis.

β€’ Listeria is 10 times more likely to be transmitted to pregnant people than to the general population.

Here are some easy things you can do to help keep everyone at your table safe from foodborne illness:

β€’ Wash hands.

β€’Keep raw food separate from cooked food.

β€’Marinate food in the refrigerator, not out on the counter.

β€’Cook food thoroughly.

β€’Refrigerate and freeze food promptly.

β€’Keep hot food hot.

β€’Keep cold food cold.

The main cultures present in yogurt are Streptococcus thermophilus and Lactobacillus Bulgaricus. The starter cultures help to convert the lactose or milk sugar to produce lactic acid. When the lactic acid increases, the pH decreases causing the milk to curdle or ferment, producing yogurt.
