That is the idea behind Stadsjochies. A greenhouse restaurant on the edge of Utrecht where the vegetables are not just seasonal, they are often grown right next to the kitchen.

The name says it all. Stadsjochies literally means “city lads”, the kind you would not expect to be farming. Yet here they are, cultivating their own garden, harvesting what is ready, and turning it into dishes that follow the rhythm of the seasons.
