When planning a class, I always make sure I have a few check lists available around me so I don't forget anything important.
This one is for my asanas, so I don't forget something important, all the spine movements, or an inversion. Trying to have a good plan from the beginning helps me to have options for creativity and spontaneity during the class! :)
And I try as well for every Asana I choose to have two or three options to make it accessible. Mat and chair, but also maybe a different pose with similar benefits. It takes more time, but I don't want to do my best so every student feels included.
