Laurel Kells is a certified Nutrition Coach serving Taupo, New Zealand and beyond. Her passion for nutrition began six years ago when she realized how her outward appearance as a motivator for becoming healthy, happy, and confident was unsustainable and unfulfilling. Laurel was driven to understand what being healthy from the inside-out looked like. She then pursued her four year Bachelors of Science degree in Nutrition Science and became certified through Precision Nutrition as a Nutrition Coach. Once Laurel learned the simplicity of nutrition science and how to meet her physiological needs she did away with extreme and restrictive diets and endless cardio workouts. She started making well-balanced, healthy, and maintainable nutrition and fitness choices. The byproduct was everything she had every wanted - peace and contentment of mind and body. As I get back into the swing of working as a nutritionist, I want to take the conversation about processed food (all food, really) AWAY (far far away) from weight and towards your unique health. I tried really hard to jump on the anti-diet bandwagon. And I think I’m still half-on it. 😆 But doing this anti-inflammatory protocol for my knee has reminded me just how powerful food is for our mind, sleep, MOOD, joints, gut, skin, etc. We need to totally do away with relating what we eat to what we weigh and look like, because it’s proven to be an incredibly detrimental relationship. However, what we eat does affect our health. (Reframe: health does not equal how much you weigh or what size jeans you wear).

So what does all this have to do with tortillas? I just want to offer you some delicious swaps to store bought products that contain less than beneficial ingredients when eaten on a regular basis. And trust me, these tortillas are SO GOOD! I make them on a cast iron pan so I’m not sure how they’ll do on other types of pans. If you make them, tag me! I’d love to see what you serve them up with!

I’ve put myself on a strict anti-inflammatory protocol to try and improve the state of my knee after a month of ibuprofen did nothing but upset my gut, as my knee continued to get bigger. 😭

So here I am, trying to make yummy food from the few things I can eat at the moment. It’s worth it after a day like today where I can finally tell a difference by the decrease in fluid and increased mobility. 🥳

I made these for the first time last night and they're a fun and delicious way to serve up carrots! I left the salt out of the seasoning so it was Sophia (my 1 year old) friendly.

Physically feeling SO ill from all the sugar cookies, chocolate, cheese & crackers I’ve eaten this week. But I don’t feel an OUNCE of shame or guilt and because of that it is so easy to let this week just be what it was without it kickstarting a cycle of deprivation and binging. Ask your body what it REALLY needs to feel nourished and loved on right now. Water? A lighter meal with some protein & veggies? REST? A slow walk? And then meet that need, not because you’re trying to undo the self-perceived “damage” you did in your diet this week but because you know your body needs water, veggies, protein, smart carbs (think sweet potatoes & quinoa), fruit, and healthy fats to function at its best. Focus on adding in the nourishing stuff rather than working off all those delicious calories you took in this week... Love yourself & think kind thoughts towards your body & have MERRY CHRISTMAS & happy new year!!!

Working with athletes is super fun & a tiny bit nerve wracking. There’s no guessing whose fault it is if they hit the wall and their pace was on target. 🙈🤦🏻‍♀️ (thankfully that’s yet to happen!) The fun part is when they hit their goal or smash it to pieces, and that happened today with a runner I’ve been working with for over a year and a half.

Today’s half marathon was an injury comeback revealer and what a comeback it was!! His goal: 1:45... His time: 1:32 with a negative split 😏🥳

Stuart, SO PROUD OF YOU! Even with those brutal winds today, you did so well. We loved cheering you on and even if you made me nervous with your pace (and that freaking handful of cranberry trio 🙈), we both knew what you were made of and you killed it today. You’re such a fun client to work with. Thanks for trusting me enough to let me take your nutrition in an unconventional route from day 1.

Cant wait to see what you’ll do from this point forward!

Insane. That’s the word that comes to mind first when thinking back to the food james was brought while in hospital for 2nd and 3rd degree burns covering 17% of his body. When I arrived the morning after he was flown to Waikato I looked above his bed and saw the meal card flipped to “normal diet”... I was furious. I flipped it to “special diet: high calorie, high protein” and immediately rang the buzzer (I did that a lot during his 3 week stay 🙈).

This is a conversation james had with his dietitian:
J: “I thought I’m supposed to be on a high cal, high protein diet? I was served 2 pieces of bread with butter and cheese in between for lunch today...” (with a side of sugary whipped cream)
Dietitian: “Yes, that’s great! Those are two excellent sources of protein!” 🤯 This is just one conversation that made me speechless. It’s no telling how much worse his healing would have been if James didn’t have me to bring him high quality, nutrient dense shakes and meals throughout the day. And don’t even get me started on the lack of supplements he was given... We know what high dose vitamins and minerals speed burns healing yet he was given the most conservative amounts, less then what a totally healthy person could be given.

Qualifications in nutrition and dietetics mean very little if you’re not continuously staying up to date with the lastest research. Nutrition science is one of the YOUNGEST sciences and we’re learning more and more every single day.

It saddens me when I see dietitians discrediting “health/nutrition coaches” when these coaches are getting monumental, life changing results with their clients because they’re approaching their practice with a whole person view and are up to date on the latest research, rather then outdated textbook practices.

We all must stay within our scope of practice! But we should never disqualify anyone who is making way for improved health and breakthrough to other people’s lives simply because they don’t have so many letters after their name. @ Waikato Hospital

IS IT WORTH IT? That’s the question I asked myself when thinking about counting macros, logging every bite, and going into diet mode to get my “bikini bod” back after giving birth to the most beautiful little girl. I’ve never answered that question so fast with a big HECK NO. I’m 3-4lbs away from my pre-pregnancy weight (depends on how full the milk tanks are) and I’ve gotten there without restricting my calorie intake EVER; but by simply eating good nutritious food, and listening to my hunger/fullness que’s. Pregnancy brought me so much FREEDOM in regards to food and fitness. Being responsible for another life inside of my own body made me so much more aware of unhealthy mindsets and how they’ve impacted my health choices. I layed them all down for the sake of Sophia. And in return I learned how to really and truly love myself, my body, and my daughter. I refuse to pass down body obsessed self hatred disguised as being healthy to my little girl. Food & burning calories will not rule her life like I did mine for so many years. 🥳
