Oaty Sourdough Carrot cake muffins (with choko)
My youngest boy loves to grow Choko, and if you have an abundance of Choko like me, and need to find ways to use some, up then this is a great recipe.
If you don't have a sourdough starter, you can replace with plain yoghurt.
Ingredients
1 cup wholegrain oats
1 cup water
2 Tablespoons sourdough starter (or yoghurt)
1 teaspoon cinnamon
1/2 teaspoon nutmeg
3 eggs, beaten
1/2 cup raisins
2 cups grated carrot
1 peeled and grated choko
30 drops liquid stevia (or whatever sweetener you prefer)
1 banana, mashed
3 Tablespoons olive oil
zest of 1 orange or lemon
1 cup of self raising flour
Topping
225g cream cheese
juice 1/2 lemon
1 teaspoon vanilla
20 drops liquid stevia
200g plain yoghurt
Method
1. Combine the oats, water and sourdough starter. Leave overnight if you have enough time.
2. Preheat oven to 180 degrees
3. Add everything else and mix gently to combine.
4. Spoon into muffin pan, and bake for 20 - 30 minutes (depending on how big your muffins are).
5. Once cooked, leave to cool for 10 minutes before removing from pan.
While cooling make the topping.
6. To make topping, just combine everything in a food processor and blend until smooth.
7. Spoon on top of warm muffins. My kids enjoyed this for breakfast.
Made a nice big batch.
