2 ingredient CRISPY BUCKWHEAT COOKIES (they taste like an elevated version of crunch bars!)
Recipe inspo from 💙

Ingredients:
•1 cup of buckwheat groats
•200g chocolate chips (I used 46% semisweet chocolate chips)
•optional: 200g (1 and 1/3 cup) white chocolate chips for topping, cacao nibs
Instructions:
1. Toast buckwheat groats in a pot on low heat until brown and crisp, it will make popping noise like popcorn! Take off heat once golden all around (These were fun to snack on also 😜)
2. Melt the semisweet chocolate in 30s intervals in the microwave until smooth, add to pan with buckwheat groats that’s off the heat. And stir until an even mixture
3. Roll and flatten into 8 equally sized cookie shapes. Cool in fridge for 30 min, then add white chocolate and cacao nibs if desired (put back in fridge to harden for another 30 min if you want a solid topping!

Enjoy this easy gluten-free treat (that could be easily made vegan as well!) 🍫

Corsican pie with courgette flowers from and .wigley (recipe is in my link in bio).

This was a huge hit! I can’t find zucchini flowers at any of my local grocery stores (even in warm summer months) so I used rolled up zucchini strips instead of the zucchini flowers. Used left over ingredients make an additional pie (slide two) in which I did the following:
•roasted zucchini in a pan in olive oil with garlic, sage, and parsley 🌿
•rolled leftover puff pastry in a circle, topped with a layer of ricotta (left a one inch border around the pie)
•top the ricotta layer with stacks of zucchini disks
•top with toasted pine nuts (toast on skillet on medium heat until golden brown).
•brush the border with leftover egg wash from the Corsican pie
•bake at 390F until golden brown (around 25 min)
•brush with a layer of olive oil when out of the oven

Pasta La vista baby!! Remember when zucchini pasta meant gross “noodles” made from zucchini? This version, which is real pasta made with a sauce made from zucchini, is much more delicious.

Ingredients:
•4 small or 2 medium sized zucchini
•6 cloves garlic
•1/4 cup pasta water
•pasta (duh)
•1/4 cup olive oil plus 2 tbsp
•1/2 cup basil leaves
•salt and pepper
•half lemon
•optional (don’t use if vegan, do use if you love cheesy goodness): 1/4 cup freshly grated pecorino Romano cheese, 1/4 cup freshly grated parmesan cheese
•optional toppings: toasted pine nuts, basil

Directions:
1. Zucchini chips- cut half of your zucchini quantity (2 small or 1 medium) in thin disks, cook in oven set at 300F for around 30 min with 2 tbsp olive oil and salt

2. For your leftover zucchini, dice and cook in 1/4 cup olive oil, add in diced garlic cloves, salt and pepper to taste and cook all until soft. Add both to blender along with basil leaves, freshly squeezed lemon juice from half the lemon, and 1/4 cup pasta water.

3. Cook pasta according to box instructions (reserve 1/4 cup pasta water for step above)

4. Drain pasta, mix in with zucchini sauce from blender, and if using cheese, mix it now, stir until blended for some cheesy goodness

5. Serve warm with toasted pine nuts, golden zucchini chips and basil 🌿

Baby it’s cold outside, which means time for this PEPPERMINT HOT COCOA BAKED OATS ☕️❄️ recipe is perfect to hit hot chocolate, peppermint and dessert cravings in one dish!

Ingredients:
•1/2 cup rolled oats
•1/2 spotty banana
•1 tbsp maple syrup
•1 tbsp cocoa powder
•1/4 tsp baking soda (or 3/4 tsp baking powder)
•1/8 tsp peppermint extract
•sprinkle of salt
•1/4 cup milk of choice (can use dairy free)
•optional toppings- whipped cream, white chocolate chips, chocolate chips (could also use crushed candy canes cookies to make it more festive)

Instructions:
•Preheat oven to 350 and lightly grease an oven safe baking dish (some coffee mugs are oven safe if you really want to go all out)
•add all ingredients except toppings to a blender and blend until smooth
•Pour batter into a baking dish and bake for 10 min if using a large baking dish, if using a small ramekin you will probably need double the bake time
•add your favourite hot cocoa toppings like chocolate chips and whipped cream

The perfect homemade Halloween treat 🎃 … CHOCOLATE COVERED SNICKERS STUFFED DATES recipe from 🍫 it’s also very easy and fast to make, which is always a plus.

Fun fact: I don’t actually like snickers candy bars, but I loved this homemade nutritious replica (dates, 🥜 and chocolate are such a quality combo)
