Today, in my quest for normalcy, I tried to make pancake from scratch using almond flour. Last time, I made pancake out of wheat flour.

Amazing, though, using almond flour taste good. It has a nutty flavor. It taste better with grass-fed butter and a sprinkle of coconut sugar.

I am a colon cancer patient with 2 years no evidence of disease.

My goal now is to increase in weight. Today, I experimented on boiling 2 tablespoons of coconut sugar and 1/4 cup water. I try to make sugar syrup.

I got a plain taho and put the sugar syrup. Well, what do you know? It taste like real taho from the vendor. I am only lacking the sago. I will check first if I can eat sago..😀

So, I have another food to add to my repertoire.

Creating breakfast...

Ingredients:
Hummus
spinach
onion
tomatoes
broccoli
sh*take mushroom
bell pepper

Thyme
Basil
Rosemary
Salt/Pepper
Parmesan Cheese
Olive Oil

Slatter homemade hummus on the whole wheat bread. Put olive oil, spinach with herbs and salt/pepper on top of the hummus. Add sh*take mushroom, bell pepper, broccoli, onions, tomatoes, parmesan cheese.

Bake for 15-20 minutes 200F.

I am experimenting on juicing for cancer control.

See, I am working around the combinations that are palatable to my taste buds. So far, I came up with this:
Carrot, green apple and celery combination.

After drinking the extracted juices, there were a lot of "sapal" or residue.

I did not see waste. I saw an opportunity for more fiber reach food. So, I decided to try creating a carrot, celery, green apple muffin.

I used:
All purpose flour
Muscovado sugar
Two eggs
Baking powder
Baking Soda
Regular oil.

It works! The muffin was Naya Tan Henry Tan and Sunnie Tan approved!

Next time, I will use wheat flour, coco sugar, olive oil so that I can eat the muffin. Hopefully, next time, it will be Piya Tan approved!

It was Friday and there were lots of uneaten veggies in the fridge. I decided to make vegetable pasta.

Ingredients:

Garlic,
Onions,
Tomatoes,
Talbos ng Camote
Sh*take mushrooms
Bell pepper
Asparagus,
Spinach
Celery
Parmesan Cheese
Thyme, Basil, Rosemary
Salt and Pepper
Chili flakes
Whole wheat Pasta

Saute all veggies. Boil Pasta. Combine together and put Parmesan cheese.

For 21 months, I have not deviated from this meal. I have a minimum of 2x a day. It is steamed mushroom, broccoli, salmon, sesame seed and black rice. For the salmon, I slice it into 3 portion for morning, lunch and dinner.

All those are anti-cancer from sesame seed to black rice. I coined the term "targeted eating" which means that all food that enters your body is purposely intended to cure a disease.

Today, I got the chance to make my first pesto sauce. I added kale, basil, 2 cloves of garlic, parmesan cheese, salt and pepper. I placed it in a food processor and its done.

I got a multigrain bread wrapped in foil from the freezer and sliced. I spread the fresh pesto on the bread. Topped it with sh*take mushroom, bellpepper, broccoli, and cream cheese.

It taste so good!

DO NOT LET VEGGIES GO TO WASTE!

I saw that the cauliflower, saluyot, talbos ng kamote, cucumber, parsley are going to waste if I do not cook it.

So, I made pasta out of it. I added Olive oil and sauteed onion, garlic, tomatoes, dried thyme, basil, sh*take mushroom together with cauliflower, cucumber, parsley, talbos ng kamote, saluyot.

I added full cream milk and parmesan cheese. Let it boil and serve.

I just realized it today at breakfast that we should challenge our usual food fare at any time of the day.

For example, at breakfast, we usually have tocino, bacon, hotdog, egg, pandesal, fried rice, coffee, waffles, pancakes, butter. Why can we not have vegetables on bread? Like tomatoes, cucumber, basil, rosemary, talbot ng kamote, saluyot, dahon ng sili, onions, garlic, spinach on bread, or made into an omelet.

I swear, I had bread yesterday and I topped it with talbos ng kamote, kale, sh*take mushroom, spinach, and parmesan cheese. Put in an oven. Do not forget dried or fresh herbs and salt and pepper. It tasted good.

Or, put fruits in slices of bread like avocado on wheat bread. Every Friday, I clean the ref of all the old vegetables by turning it into pasta or putting it on slices of bread.

I encourage everyone to challenge the existing food we buy from the grocery and those that we eat in the restos and food outlets.

Being a colon cancer survivor for a year is very interesting!

I am still disciplined with regard to my food intake. I have not deviated from the path of healthy nutrition. Whenever our kitchen churns out good smelling food that has meat in it, I just use my sense of smell and say, "Wow, it SMELLs so GOOD!!". When I go out and I see all kinds of delicious food, I say, "That looks, Good!". True enough, my discipline is paying off. I am "alive", ain't I? (hehehe).

I would like to introduce everyone to the art of "TARGETED EATING". I just coined the term myself for a lack of better word. How does it work? Take, for example, myself. I am a colon cancer survivor for a year and I know that turmeric, malunggay, dahon ng sili, saluyot, tomato, broccoli, cauliflower, almonds, olive oil, butter, are good for me. So, I just work around those ingredients and come up with my own recipes. I incorporate them into pasta dishes, soups, and other dishes.

What am I saying? I would like for everyone to choose their food intake based on what will heal their diseases.

For example, tea and microwave garlic are good for those suffering from high blood pressure. Okra is good for those with diabetes. If you have multiple ailments like a diabetic with high blood pressure, incorporate the garlic, okra, and tea in your daily diet.

One thing I noticed about naturopathy therapy is that prescribed food intake needs to be done consistently.

About three (3) weeks ago, I dropped by a quaint bakery along Pioneer St., Mandaluyong. It is called Tiny Teapot Cafe. I spoke to its owner Lizette. I asked her if she can create a bread that can be eaten by a cancer patient like myself.

I asked her not to put sugar; to use complex grains; butter from grass-fed cows etc. Last Saturday, she sent over two complex grain loaves of bread namely: Multigrain bread and Country Rye bread.

For the longest time, my wheat bread just comes from the grocery and is commercial in nature. This week, I am enjoying loaves of bread with no sugar and is healthy for me. I would like to share this with everyone.

I think DIABETIC and CANCER Patients alike can enjoy food without feeling deprived.

I was feeling full for lunch today so I decided not to have my usual black rice with baked salmon. I had wheat bread with avocado, thyme, basil, rosemary, and grass-fed butter.

To make it, I suggest to please spread the grass-fed butter on wheat bread topped with Avocado and sprinkle the herbs. Put in an oven or toaster for 10 minutes.

It is very filling!

Body signs: I went to my doctor last July 10 and he saw that my stomach was a bit bulging. This is because I am gaining weight.

He said that our STOMACH should NOT EXCEED 30 inches in measurement because it will be a source of health problems in the future.

When we measured on the spot, my stomach was 30 inches but flabby. I need to work on an "Abs". This week I started skipping ropes religiously.

I want to share with everyone about my CANCER HEALING FOOD and how it lowered the DIABETES' hba1c results of my husband from 11 to 7.

In early 2019, my husband was diagnosed with diabetes. His hba1c results were 11. The doctor wanted him to take the maintenance medicine "metformin". Henry, being hardheaded, went against the doctor's advice.

Meanwhile, within the year, I was diagnosed with Colon Cancer and went through surgery. During the first six (6) mos. after surgery, I did not eat anything except BAKED HERB SALMON with Steamed Brocolli, Bellpepper & Mushroom for breakfast, lunch & dinner and I often share my cancer HEALING food with him.

Late in 2019, we both went to the hospital for tests. I went for my regular battery of tests for cancer and for Henry to find out the status of his diabetes. The results of his Hba1c took us by surprise because it went down from 11 to 7 while I passed my test.

In the next few weeks, we will be marketing BAKED SALMON online so that everyone can start their JOURNEY to WELLNESS.

Breakfast for me is the best time of the day. It usually starts with overripe fruits (kiwi, papaya, mango) and with whatever I can find in my ref. I just make it up as I go. I just make sure there is wheat bread, vegetables, dairy, and baked.
Today, I found the following:
Wheat bread
Basil leaves
Avocado
Grass-fed butter
Tomatoes
Goats cheese
Instructions:
1. Slice bread.
2. Put butter on the left side of the bread. Add basil, tomatoes, and cheese.
3. On the right side of the bread, put avocado.
Put together and put in a panini maker. If you don't have any panini maker, put something heavy on top of the bread while in the oven.
There was also Pomodoro sauce in the freezer which I made 2 weeks ago.
I sauteed thyme, bell pepper, basil leaves in olive oil. Add the homemade Pomodoro sauce.
Boil gluten-free pasta. Mix pasta and sauce together add parmesan cheese.
